What wintery dish are you cooking today?

I've got time today to pop to the shops and put a stew or something in the oven.
It's so cold today, so the idea of the oven on, slow cooking something is appealing.

Im here seeking inspiration and trying to find some joy in this freezing weather.

Salad? SALAD? I think divorce would be on the cards if DP had given me a salad last night!

We had beef bourguignon in the slow cooker last night with celeriac mash. Was lush!

I think tonight might be risotto with spicy grilled halloumi on top

I made chicken casserole with barley, carrots, leeks, chestnut mushrooms, peas, fresh herbs and sneaked in some shredded sprouts. DS said it was the nicest he'd ever tasted - I didn't tell him about the added sprouts.

I made lentil and vegan sausage casserole. It had turnip, onion, petit pois, carrots, fresh turmeric, garlic, ginger,Celtic salt, black pepper, leek, mixed herbs and two pints of water.

Tonight we're having pizza and salad due to the fact that I want something a bit lighter and only two of us in. Last few days we've had roast veggies and salmon, chilli pasta bake and mushroom stroganoff (that's to a suggestion on here!).

We're eating quite lightly atm as we did a lot of feasting over Christmas - yesterday we had prawn and courgette linguine and it was really nice to have something completely different from the very rich foods we've been having.

Was going to be some roast veg and greens and quinoa but feeling the cold so going for sweetcorn chowder.
Last night was mushroom korma.

No idea what's for tea tonight, but I've just made banana bread, ginger cake and mini egg cookies

Haggis with neeps and tatties, plus Brussels sprouts, carrit's and a spot of gravy.

Coconut bread and butter pudding with custard

Roasted butternut squash soup, with chilli and creme fraiche for lunch. Cottage pie tonight.

Oh this sounds delicious. Love haggis.

Most likely a risotto with chicken, bacon, and peas. DH wants me to batch cook some bolognaise but I don't think I have the patience for that much washing up during the week.

having chicken meatball curry today (made by a friend) but last week I made a lovely dish of roasted butternut squash and sage orzo. I also made a butternut purée with mascarpone and topped it with roasted and the sautéed golden beetroot, kale, mushrooms and walnuts. and a parsnip and chestnut soup. all these were magical.

A potato, courgette and cheese sauce bake - made yesterday and heated up in the office microwave today.

Veggie haggis with spuds, stir fried sprouts and savoy for me and Dd1. Steak pot pies with carrots and sweetcorn and the same sides for DH and dd2

can I ask if you made the haggis from scratch or is there a brand you use? I would love to try it

Saltimbocca but really just chicken breasts wrapped in Parma ham.
With sautéed potatoes, greens and sauce from the chicken (a sort of white wine, lemon and mustardy sauce mixed in with the chicken juice in the pan).

Bangers mash veg onion gravy

Root veg soup for lunch (homemade out of the freezer).

I'm going to make a slow cooker chilli this afternoon which we will have tomorrow.

Currently in the slow cooker is beef and broccoli (Asian dish) but broccoli actually only goes in 30 mins before the end! Delish!
