What wintery dish are you cooking today?

I've got time today to pop to the shops and put a stew or something in the oven.
It's so cold today, so the idea of the oven on, slow cooking something is appealing.

Im here seeking inspiration and trying to find some joy in this freezing weather.

I am on my own this evening as DH will be off to work soon. I am not great at sitting round so I potter.

So tonight Matthew I will be mostly making
Beetroot hummus
Mushroom soup
Sweetcorn fritters.

The mushroom soup is requested but DH - I will freeze portions.
The sweetcorn fritters are bread substitutes for me
The hummus is all mine and I will fight you for it!

DH and I are using up leftovers tonight. One portion of yesterday's chicken & ham pie, and one portion of last week's cottage pie, currently thawing.

This is about as thrilling as life gets at the moment. Actually, I might get up off my backside and go and sort out some veg for it.

Fridge was very empty so we had carbonara.

Cooking some lamb shanks today. And I seem to have ordered WAY too many carrots so could do with some ideas for those!

@therealcookiemonster would love the recipe for the parsnip and chestnut soup, if there is one? And the butternut orzo - is that with orzo pasta or orzotto with pearl barley?

@BitOutOfPractice - Divorce was considered but it was delicious. Lovely dressing he'd made and lentils (I am trying to lose weight after a too indulgent Christmas!).

Steak and sausage casserole is in the slow cooker. Will finish with a puff pastry lid and serve with greens, neeps and tatties.

I love Autumn -Winter cooking. I maintain that as mammals our bodies are telling us we need to hibernate and making us crave all the stews and hearty autumn and winter cooking. That said, I love summer salads and barbecues too! Grin

For lunch I had a roasted red pepper & pumpkin soup that I fished out of the freezer with white soda bread smothered in kerrygold butter. I forgot how good that soup tasted especially since it was one I concocted to use up the spare pumpkin at halloween. Seafood chowder is also a winter favourite of ours, it's really filling.

This time of year I also look forward to slow cooked lamb in a red wine gravy on a pile of mash, and stews, tagines and curries as well!

recipe from bbc good food. here is the link. I used precooked chestnuts from merchant gourmet (it's really good, I polished off the rest or the pack while cooking ).

the orzo, I used orzo pasta. just fried some shallots, garlic, chilli flakes, sage and rosemary with butter, then added orzo and sautéed for a few more minutes. removed sage leaves, added a little stock (i cheated and used marigold boullion) at a time until cooked. then finished by adding roasted butternut squash that i had blended with mascarapone and a few spoons of stock. took off the heat and topped with roasted pine nuts, parmesan and those crispy sage leaves from the beginning. was soo nice.
