If you had a night in by yourself, what would you make for dinner?

I will be enjoying the silence of the house to myself on Friday. I will not be falling into the lures of Deliveroo.. I am trying to limit my takeaway spending!

What can I make myself as a bit of a treat on a Friday. Considering charcuterie and wine.. but wondered what you'd do to see if there is something more exciting I like the sound of! Open to anything..

I'm eating alone tonight, I've bought all the bits I need to make sushi rolls. I'll probably end up bunging it all together and having a sushi bowl to save the faff.

Crisps and dip if I’m feeling lazy, or something my DP doesn’t like, such as fish pie or creamy pasta with prawns.

i would do a mini charcuterie board with a melty Camembert and french stick. nice bottle of red wine :) perfect

See I am a terrible eater when left to my own devices, and the fact that I'm feeding other humans is the only reason I eat proper meals.

If I was on my own I'd likely just be eating pittas straight from the bag dipped in whatever I could find in the fridge that's runnier than pittas.

Or I treat myself to a proper beige meal from the freezer because everyone else in my family are health nuts and never get the odd cravings for potato smiley faces and Findus crispy pancakes.

Usually risotto with leek and bacon.

But recently have been thinking corned beef hash, with tom k on the side , miss having that as the family won't eat it.

Or a veggie posh salad - with blue cheese and mushrooms.

When I’m totally alone I buy a ribeye steak and have it with chips and peas, I share a little of the steak with the cat. We keep it a secret from DH.

Smoked salmon pasta:

Gently heat cubes of good quality smoked salmon in butter for about a minute. Add a glug of brandy and reduce. Add cream, nutmeg, a dash of lemon.

Meanwhile, boil fettuccine in salted water. Set aside some of the water for thinning your sauce.

Drain fettuccine and add to pan, adding cooking water as needed.

Excellent with chilled white wine.

Baked (or microwaved) Camembert with bits of garlic in it and sticky onion marmalade on top, with some baguette and a gold bottle of Sauvignon Blanc. Mmmmmmmmmm

I always make something with noodles-often Nigella's Drunken Noodles. Or noodles with peanut butter and sesame seeds. And 2 peaches.(bought well in advance so they'll be ripe) And some wine. I'm doing exactly that this Friday. And Saturday.

I go one of two ways -

Wine, cheese, crackers, sharing bag of crisps, onion & sour cream dip

or

I put on a podcast, pour a glass of wine and do a batch cooking evening, eating a bit of everything as I go along, and then refuse to cook for the rest of the weekend. Particularly like making a vat of soup, a quiche or fritatta, a casserole/stew/curry as all of those things will get better through the weekend.

When I’m alone it’s chilli with part baked bread and lots of butter. Dh hates chilli so it excites me if he’s away and I make it just for me 😁

Pate on toast with a onion chutney. Followed by salmon, new potatoes, vine ripped tomatoes, spinach with crème fresh. Then maybe a gu lemon cheesecake.
