If you had a night in by yourself, what would you make for dinner?

I will be enjoying the silence of the house to myself on Friday. I will not be falling into the lures of Deliveroo.. I am trying to limit my takeaway spending!

What can I make myself as a bit of a treat on a Friday. Considering charcuterie and wine.. but wondered what you'd do to see if there is something more exciting I like the sound of! Open to anything..

My go to is baked camembert, baguette and caramelised onion chutney.

Or sometimes I make a big bowl of nachos with melted cheese, salsa, sour cream, guacamole and jalapenos. If I've got any chilli in the freezer I'll have chilli on my nachos too. Or sometimes fried chorizo and chopped spring onions.

Given that for various reasons (Coeliac in the house, massive difference in taste etc.), it's not unheard of that I can end up cooking 3 or 4 different meals or variations of a meal for just 4 of us.

If I have a night in with nobody else to cook for (which happens maybe once or twice a year.....2 of the 4 of us are incredibly old and housebound), I opt for beans on toast with the following caveat for the 'treat' side of it:

Beans (must be Branston brand) should have a generous blob of butter (sorry, arteries) added prior to heating. Various seasonings would be added (garlic, steak seasoning, cayenne all spring to mind). Next, I would add 2 slices of white toast to a slab of butter (muttering more silent apologies to the arteries). Then 2 rashers of crispy bacon placed atop and all finished off with a sprinkling of black pepper and some grated knock-your-socks-off cheese (at which point said arteries have pronounced "oh do you what you fucking like, we're outta here).

Then a binge-watch session of all the 'crap' TV that DH isn't interested in. Currently re-running the 80's sitcom Duty Free and The Good Life.

I love my posh beans on toast. And I love butter. I then spend the next month chewing celery and brown-nosing those arteries).

I'd probably just get loads of nice picky bits from M&S. Crisps,dip, olives, grilled artichokes, anchovies, bread, pate, nice ham and cheese and a nice pudding 😍

I'm eating alone tonight, I've bought all the bits I need to make sushi rolls. I'll probably end up bunging it all together and having a sushi bowl to save the faff.

I teetered between my beans on toast or a Chicken Kyiv, I love a good Chicken Kevin (preferably an M&S Gastropub one - with creamy peppercorn sauce and crispy potato slices).

Pork belly, ribs or breaded chicken on the bone. My husband doesn't like any of them! Accompanied by coleslaw, chips and salad. Heaven.

One of the supermarket in my town do an lovely seafood pie with loads of prawns and leeks. I cannot make better homemade for less money. I would spinkle with garlic breadcrumbs
