If you aren't having a takeaway tonight, what's on the menu for dinner?

I have always had a Friday takeaway for as long as I can remember. I'm also saving for a wedding so trying to cut this down a bit and cook at home.

But sooooo exhausted come Fridays that I always cave! I've realised how much I've eaten out this week and spent on it so about to head to the supermarket.

What do you have on a Friday for a fuss free dinner - whether a bit of a treat or general everyday stuff.. I need to have a word with myself and get inspired for ideas that feel exciting or just super easy on a Friday!

A massive salad with everything I could find. Steamed salmon leftovers, boiled eggs, little bit of brown rice, basil, toasted walnuts, sliced peppers, cucumbers, cabbage, spinach, capers, avocado, carrots, salad leaves and a lemon, pomegranate juice, honey dressing. Have to say very tasty and took about 15 mins as salmon and rice precooked from sushi rolls last night.

We always used to have takeaway on a Friday too but stopped a few years ago due to the cost. But I'm always exhausted by Friday evening so can never be bothered to cook anything complicated or time consuming yet still want something that is a bit of a treat to celebrate the weekend.

Go to Friday night dinners for us are now:

Homemade pizza. Flatbreads spread with pesto and topped with cheese and whatever else we have in the fridge. We do a naan bread one too....naan breads topped with curry sauce, peppers, onion and cheese and baked in the oven.

Baked camembert, chutney and a baguette.

Fish tacos. Essentially breaded fish cooked and put in a wrap with lettuce, spring onion, coriander, chilli sauce and aioli.

Tortelloni pasta and a jar of sauce.

When I really can't be bothered.... Chips, cheese and beans.

Waitrose Indian deal - butter chicken, Keralan chicken fry, garlic and coriander naan, and carrot and spinach pilau rice. Way cheaper than an Indian takeaway, cost £11 for the lot!

From what dp has bought, chicken with pesto mozzarella and Parma ham with broccoli. I assume he’s going to stuff it and wrap it.

Mushroom risotto, using homemade chicken stock and elderly mushrooms. I found an excellent microwave recipe so I can sit around with a single malt while it cooks.

We always have an easy tea on a Friday. Something like tacos or pizza. Tonight was burgers in brioche buns with cheese, onions and fries. Occasionally we'll have curry. We cook proper meals from scratch every other night of the week.

Meatballs in gravy. Chucked some frozen Swedish meatballs and sliced red onion in the slow cooker at lunchtime with 2 tablespoons of cornflour, a good squeeze of tomato puree, some Worcester sauce, and enough beef stock to cover the meatballs. Put it on high for 5 hours, and added a few gravy granules at the end as it was a bit thin. had it with microwave mash, broccoli and peas, and leftovers for tomorrow to have in a sandwich at lunch.

Totally fuss free? Then fish 'n chips. Battered fish from whatever supermarket you use and chips from same, in the oven for 20-30 min. Frozen peas take five minutes. Done!
Tonight though we had a kind of hotdog with fried onions, wedges and coleslaw from Hello Fresh.

I made corn beef hash and then had cake and custard after. Lovely and just what I needed after a long cold day outside!

I have quinoa cooking. Dug out some salmon and frozen green beans from the freezer to go with it, with pink pesto. Not an actual recipe, and not sure that i'd recommend it - Hello Fresh delivering tomorrow and the cupboards are a little bare!

We always do supermarket pizzas on a Friday, had tesco fibest tonight, it was really good. Just did some crudités so I don't feel totally terrible!

Onion, celery and garlic plus fat from the top of the chicken stock: 2 minutes on high.
Add rice, stir well, 1 minute on high.
Add two cups stock, 5 minutes on high then 7 minutes on medium.
Add rest of stock and mushrooms, cover, 7 minutes on medium.
Stand covered for 5 minutes, stir in grated Gran Padano and butter and serve.

It's not as creamy as a stirring recipe but if I have time and stir during the medium power stages it's OK. Just less time to imbibe!

Shop bought lasagne with salad,cheesy garlic bread and a large glass or 2 of red.After the weather/traffic/work today,it feels like a real Friday treat and start of the weekend.
