If you aren't having a takeaway tonight, what's on the menu for dinner?

I have always had a Friday takeaway for as long as I can remember. I'm also saving for a wedding so trying to cut this down a bit and cook at home.

But sooooo exhausted come Fridays that I always cave! I've realised how much I've eaten out this week and spent on it so about to head to the supermarket.

What do you have on a Friday for a fuss free dinner - whether a bit of a treat or general everyday stuff.. I need to have a word with myself and get inspired for ideas that feel exciting or just super easy on a Friday!

Chicken fajitas!

I buy and chop up double the amount of chicken and veg, add some oil and the seasoning and then freeze the extra so it can just be defrosted and thrown in the pan next time.

Macaroni cheese. I'd already made the cheese sauce so just took it out the freezer this morning to defrost.

I've had left over bacon and tomatoe pasta with loads of cheese and a slice of garlic bread. Wild outside and I'm heading out for night shift soon. Normally do home visits so hope it settles soon...

Freezer raid tonight, clearing the freezer before half term.

DD2 had chicken meatballs with some cherry tomatoes over pasta; DD1 had a fish finger wrap and salad. DH is going to have some assorted baked beige things and I will have some corn fritters, a lone chicken skewer and salad.

I'm on my own tonight so am currently having a glass of wine with crisps and dips. I've bought myself a ready meal for later on to have when im watching Gogglebox - perfect Friday night!

I’ve got some leftover chilli (vegetarian and AMAZING, bbc burnt aubergine chilli). I baked 2 small potatoes, then cut them into 4 so like big wedges and roasted them some more. Threw some cheese on, topped with the chilli and some extra hot sauce. Omg…

@Squirrelsnut I had sloppy scrambled eggs on a thin bagel for lunch - it was gorgeous (and eaten in 2.5 minutes) 😁

I'm doing tikka paneer (for me) and tikka chicken (for DH). We use a mix from The Spicery and it's soooooo much better than anything from a supermarket. It's 2 tbsp of the spice mix, 1tbsp of tomato purée and 100g of yoghurt mixed together. Then chop the chicken and paneer, marinate and grill. Then we have mint raita with dried mint, 150g yoghurt, 1tsp sugar and a big pinch of salt. We're doing a mint version of Zhug Instead of chutney. A bunch of mint, juice from 1/2 lemon, a clove of garlic and some green chillies, salt. We add spices from The Spicery Mezze Legend book but it's still good without. We have a kenwood mixer with a multimill attachment we use for the Zhug. It's like a small blender jar so the clean up is minimal.

I did a slow cooker sausage casserole, it had smoked bacon lardons, carrots and onions in it too. I served it with some fab homemade roast potatoes, steamed Savoy cabbage and green beans.
It was very nice, if I say so myself. Even better is I stretched it to do 4 portions (out of ten sausages) so that’s going in the freezer.

Beans cooked in a tomatoe stew (all chucked into the pressure cooker) with rice and veg.

Today it’s corn on the cob which is microwaveable in 3 mins (normally it’s steamed carrots or broccoli)

An experimental chicken pasta bake. Plans changed so I wouldn't have had time to cook it as normal.

Instead I lobbed everything into the slow cooker at lunch time and it's turned out a treat! It would have been nice if I'd been in to stir it and it was a bit crispier, but the chicken is perfectly cooked through and it's all tasty.

Will definitely be doing it again.
