If you aren't having a takeaway tonight, what's on the menu for dinner?

I have always had a Friday takeaway for as long as I can remember. I'm also saving for a wedding so trying to cut this down a bit and cook at home.

But sooooo exhausted come Fridays that I always cave! I've realised how much I've eaten out this week and spent on it so about to head to the supermarket.

What do you have on a Friday for a fuss free dinner - whether a bit of a treat or general everyday stuff.. I need to have a word with myself and get inspired for ideas that feel exciting or just super easy on a Friday!

Scotch broth made last month and taken out of the freezer this morning. Delicious with some seeded bread to dip in 😀

Fish finger sandwiches. We have Friday night rotation of FF sandwiches, steak baguettes and Fajitas.

We're having Mediterranean chicken orzo from the pinch of nom cook book tonight. I try and make something nice on a Friday as prefer takeaway on a Saturday after a well deserved day of doing nothing 😂 Also, if you do a special dinner on a Friday you can hide in the kitchen with a glass of wine while you do it!

I caved at the supermarket today and bought a lovely looking cauliflower cheese ready meal, but I pimped it up, cooked some sliced potatoes and broccoli, put them in the bottom of a dish and carefully added the cauliflower cheese with a large flat serving thing, scraped all the extra sauce out of the foil as best as I could and grated extra cheese on top.

bunged some sausages on a baking sheet and chucked it all in the oven, can’t wait for it come out, it’s looking very nice. I normally cook from scratch but this was definitely worth the little effort.

When i am really tired I like breakfast for dinner. Which usually means scrambled eggs, bagels and butter and baked beans. With alot of tea.

Today thought we have had leftover lasagne and garlic bread.

Yum ! Please could you give a bit more detail - how do you do the beetroot, is the goats cheese hot ? Is this a little starter ?

I also love the sophisticated starter juxtaposed with vienetta. I do hope it's mint 🤤

we are having a mishmash roasted Kabocha, Labneh, grilled marinaded-in-spice chicken thighs and lots of raw veggies in a salad.

Lovely macaroni cheese (which is its real name, no mac and cheese nonsense), with oven roasted tomatoes. Yum.

Roast chicken, Yorkshire's, roast potatoes and veg. It's easy to cook a chicken in the oven when WFH. Don't like to cook things like this at the weekend and be tied to the house.

I got a brand new Ninja air fryer so am putting it through its paces: ginger/soy salmon kebabs with veggies and brown rice. I’m also on a diet! So I won’t be drinking any wine whilst watching the rugby oh no

Another quick dinner we have is cilantro-lime marinated chicken with red rice and smashed avocado. That's an early shift dinner when I do something quick.

For the past 20 yrs DH has cooked curry on a Friday night, it's bloody lovely. He does a big pile of home-made chapati too, yum.

Can't get takeaway locally (rural far west of Ireland), so I make my own. Defrosted a chicken Madras for dinner, just had it with some plain basmati. I make it once a month and divide into four portions (DH has gone off curry, so it's just for me). I'll be cooking venison burgers when DH gets back from the pub, in home-made burger buns (not something I usually do, but got the urge today :)

We are having lamb steaks, bulgar wheat and roast veg tonight.

@ErinAndTonic I feel you. Can you compromise and choose a ready prepared dinner from the supermarket? My parents look forward to their supermarket fish, chips and peas every Friday at a fraction of the chippy cost, just half an hour in the oven.

Mushroom risotto, using homemade chicken stock and elderly mushrooms. I found an excellent microwave recipe so I can sit around with a single malt while it cooks.

Just put a big tray of veg to roast in the oven – onion, garlic, pepper, courgette, mushroom and purple carrot, seasoned with cajun spice mix. Will serve with rice, grated cheese and some toasted sunflower seeds.

That sounds delicious 🤤. Do you think some griddled halloumi could make this a filling meal for a meataholic that would ask me what we were having with it ?
