Mine is fruit cake, you can keep your chocolate cakes and cupcakes with mountains of butter cream - I love a fruit cake with a cuppa

Plain old school cake! Boring I know but it really hits the cake spot.

My other favourites if I had to choose are lemon drizzle and coffee and walnut.

Love all the cakes but my favourite is definitely carrot cake. Had the best one last week from joe and the juice, it was so perfectly spiced and delicious.

Also a big fan of Nigella's Guinness cake and I do love a fruit cake. The cakes chapter of Nigella's Christmas book is fab - the chocolate fruit cake is amazing OP (I'm not really a big chocolate cake fan but the combination is perfect)

Also just moist cakes in general, so fresh fruit cakes rather than dried are lovely. Pear, apple, plum, apricot all lovely

I also like Tarte Tatin. With some creme fraiche. It is beautiful in Summer.

As we move into Autumn, I love Plum & Almond crumble. With some English clotted cream, chilled. It has those last vestiges of Summer, but doesn't abandon it. Instead it ushers in warmth and comfort. It bridges the seasons.

A really good pineapple upside down cake, I make a syrup with the juice and soak it through the cake when cooling. That’s the kid friendly version, but for the grown ups, a dash of dark rum in the syrup or Malibu is also a hit(I adapt the recipe to include coconut to punch the flavour up)

Dark chocolate and pear cake, it has to be done with top shelf cocoa powder, ground almonds to add to the texture and taste, and fresh pears that are full of flavour and ripe and firm. I make a chocolate ganache to cover it so it looks glossy and beautiful. Serve with single cream or if you want to go all out crystallised ginger ice cream.

Amaretto Raspberry Bakewell Cake, is also a hit.

Im currently perfecting a sour lemon meringue cake, im up to version 7, just needs tweaking.

My mum was a fantastic patissiere, who started her training at 15, all my life I have been surrounded by cake, and other confections.
I love making cakes for others, it makes people happy.

I would always pick a slice of really good fruit cake, or something with blackcurrants in, that sourness is a thing of beauty.

Cake is seriously the best invention ever. Forget splitting atoms, electricity, the telephone .. for me we need to name a few streets and universities after the person who figured out eggs, flour and butter baked at a certain temp make something magical.
