What are you all having today instead of a roast?

Usually do a full dinner on a Sunday but don't fancy cooking one when it's so nice out (and I was at a party last night so a little delicate.)

What can I make that's easy but tasty in the nice weather? Would usually do a roast chicken, new potatoes, salad etc but wondering if anyone might have any suggestions for a change Smile

Beef pie (sorry Aberdeen Angus steak pie as Asda describes it) new potatoes and green beans.

One of our usual quick meals for when we're both working, but can't be arsed

KateJohns · 11/06/2023 09:43

Can't remember the last time I had a roast on a Sunday tbh.
I usually just chop up lettuce, cabbage, carrot and some cold meat like sliced chicken or ham etc. Served with a cut up premade tesco quiche and Tiger baguette sliced up and buttered.

Takes a few minutes to prep leaving enough to e to relax cause it's Sunday and relaxing is what Sunday is for. 😂

MrsJBaptiste · 11/06/2023 09:48

We're the opposite, we never usually have a roast on a Sunday but DS1 is ba k from Uni so has picked today's meal - beef, yorkshire puds, roast potatoes and veg. He's looking forward to it, DS2 not so much!

We'd usually have a lasagne, fajitas, pasta dish on a Sunday. I hate wasting my day in the kitchen, especially when it's sunny!

Spatchcock chicken on the bbq with salad. Was going to bbq a beef joint but forgot to take it out of the freezer.

EvenmoreDisorganised · 11/06/2023 09:49

We virtually never have roast dinner either, I have got some lamb steaks out of the freezer and will probably marinade those and do flatbreads and salads.

ilovebagpuss · 11/06/2023 09:49

Don't do a roast often as my heathen DD's Don't like them! Spinach and ricotta lasagne today with any other Mediterranean veg that needs using up.
Probably add some garlic bread on the side.
Yesterday we had a sort of wrap buffet with nandos rub chicken and some chilli halloumi and then some salad a few fries and various sauces.
A bit of cooking and then everyone assembles their own.

mdh2020 · 11/06/2023 09:50

Honestly can’t remember the last time I cooked Sunday lunch. It will be beigels, cream cheese and smoked salmon, crisp and coleslaw in the garden.

Beezknees · 11/06/2023 09:52

Grilled turkey bacon, grilled mushrooms and poached eggs. Trying to lose 2 stones.

GandTtwice · 11/06/2023 09:53

Joe Wicks recipe chicken and mushroom pie. It's got filo pastry on the top so it's lighter than a normal pie crust

OMGitsnotgood · 11/06/2023 09:58

we almost always have a roast on a Sunday, but today it's homemade beef burgers & salad

HomeSeck · 11/06/2023 10:00

Marinated pork and chicken kebabs that we'll just chuck on the grill and have with wraps and salad bits.

Definitely no standing in a hot kitchen faffing with a roast today!

Summerishereagain · 11/06/2023 10:04

Lamb kebabs and halloumi and veg kebabs and some combination of salad, cous cous salad, pitta and hummus.

Its not very warm here today but we hardly have a roast anyway.

Assignedtoworryyourmother · 11/06/2023 10:06

Tomato and mozzarella salad as that's what needs to be used up.

MintJulia · 11/06/2023 10:07

Lemon pepper pork with cold new potatoes and salad.

Bottled blackberries and creme fraiche

Crabwoman · 11/06/2023 10:08

Coca cola ham in the slow cooker. Massive one so we can use leftovers this week.
Potato salad, green salad, crusty bread.

ComputerInitiateJump · 11/06/2023 10:12

I've got chicken chasseur cooking in the slow cooker. Minimal effort.

Icequeen01 · 11/06/2023 10:12

We usually have a roast on a Sunday but as it's so hot today DH is desperate to try out his new rotisserie on the BBQ and cook a whole chicken - God help us all! I will have sausages etc on standby just in case .....🤣

2Stone2Go · 11/06/2023 10:14

Some good ideas here, thanks all!

I definitely want something easy with minimal fuss

I still fancy roast chicken so we'll have that with salad and either some sort of potatoes, pasta with pesto, or maybe just crusty bread.

Snap @HomeSeck ! Although we're having lamb not pork. But identical save for that!

VenAqui · 11/06/2023 10:19

I’m brining a whole chicken to roast later today, then I’m making our usual red and whole grain rice with med veg, it makes enough for a couple of days so no cooking at all tomorrow.

Silvergoldandglitter · 11/06/2023 10:19

I've got salmon, new potatoes and salad

rightioly · 11/06/2023 10:19

Massive salad

WonderDays · 11/06/2023 10:20

Im actually going to do a roast, we’re having it quite early and then everyone can sort their own tea out later.

SushiSuave · 11/06/2023 10:21

We are having a chicken and chorizo paella with baguette.
