What are you all having today instead of a roast?

Usually do a full dinner on a Sunday but don't fancy cooking one when it's so nice out (and I was at a party last night so a little delicate.)

What can I make that's easy but tasty in the nice weather? Would usually do a roast chicken, new potatoes, salad etc but wondering if anyone might have any suggestions for a change

I don't know how you people do it!

I'm on my own so a cheese sandwich

I will be sending DH off to buy a ready-cooked chicken from the hot counter at the supermarket. We'll let it go cold and then have it with some salad and new potatoes later. I really can't be arsed to have the oven on today.

After seeing so many people saying they loved it on the M&S thread I have a four cheese ravioli to have with a massive salad

We just had a lunch of veggies, jersey royals, boiled eggs and Hollandaise sauce. It was fit.

Using up what I need to!

We normally have a roast on a Sunday but when it’s warm it’s usually bbq’d meat and salad, maybe some sautéed potatoes and stuff like that.
Today I’d like a big chicken bacon and avocado salad with croutons. We are having Eton mess for pudding, it’s what ds has been asking for all week!

Potatas bravas con huevos rancheros.

Leftover new potatoes fried with onion, chilli, garlic and tomatoes, pull to edge of the pan, butter, throw in a half bag of spinach, let it wilt, pull to edge, fry eggs in the middle.

Chicken marinaded in spiced yoghurt in a bun with lots of lettuce and a slather of mayo and skinny fries followed by rhubarb sponge crumble and ice-cream

Chicken satay skewers, fiery noodle salad.

Were having burgers, potato salad and coleslaw.

We rarely have a roast on a sunday i always seem to do them on wednesdays for some reason 🤣

I bought a cold roast chicken from Waitrose with salad, potato salad and coleslaw - already eaten the olive ciabatta 🙈

I didn't realise a roast dinner on a Sunday was still a thing so it feels a bit like if someone asked me what I'm having for afternoon tea or something 😄

Could someone recommend something I could make since I since I have beet root, salad, sliced pumpkin, rice, pearl barley, and tomatoes.
