What are you all having today instead of a roast?

Usually do a full dinner on a Sunday but don't fancy cooking one when it's so nice out (and I was at a party last night so a little delicate.)

What can I make that's easy but tasty in the nice weather? Would usually do a roast chicken, new potatoes, salad etc but wondering if anyone might have any suggestions for a change Smile

We had roast chicken Caesar salad yesterday lunchtime (chicken being roasted in the air fryer is a game changer) then homemade pizza for dinner last night. At lunchtime today I made focaccia, and we’re having tagliatelle with meatballs for dinner with leftover focaccia on the side. And rice pudding is in the slow cooker for pudding. I’ve done a lot of cooking this weekend, also made cookie dough tray bake and banana bread for packed lunches 😋

I make vegan chilli tacos with the crispy tacos. Love the freshness of the lettuce and coldness of the vegan cheese against the heat of the chilli. Start the meal off with a bit of melon or a lovely salad and finish it with some fruit sorbet.
