What are you all having today instead of a roast?

Usually do a full dinner on a Sunday but don't fancy cooking one when it's so nice out (and I was at a party last night so a little delicate.)

What can I make that's easy but tasty in the nice weather? Would usually do a roast chicken, new potatoes, salad etc but wondering if anyone might have any suggestions for a change Smile

We had nachos (cheese just melted quickly under the grill), guac, salsa, cut up veg with hummus and a big bowl of strawberries.

We all love a roast dinner and I enjoy cooking them but it’s definitely an autumn/winter thing. It’s not even the heat, I seem to lose my mojo for them in the summer. I love autumn and winter, all the best food.

Today is burgers, bread and cheese and home made sausage rolls. And salad.

I love a roast dinner but don’t usually make them in the summer though it’s not that warm here. Unfortunately I have a small roast beef that needs using up and don’t want to waste it. Going to make roast beef and Yorkshire pudding wraps with herby roast potatoes and homemade gravy.

We never have roasts as they don't do anything for me!

Will have mexican burgers - chicken coated in chipotle, mashed avocado mixed with garlic to make a non jalapeno guacamole all in a toasted brioche bun

Very easy and absolutely delicious bar the number of syns I've discovered are in avocado and brioche bun but it's too amazing to forgo!

just about to have Eton mess using low fat yoghurt instead of cream. Absolutely delicious

Roast chicken dinner here - middle daughter home from Uni and requested it. Couldn't say no, but massively regretting my decision now!

A salad of cold, shredded duck, rocket, lettuce, orange segments and pine nuts with a hoisin, vinegar and orange juice dressing.

Could someone recommend something I could make since I since I have beet root, salad, sliced pumpkin, rice, pearl barley, and tomatoes.

I would roast the beetroot and pumpkin in cubes, do a cheat risotto with the rice and barley by boiling in stock (cube or knorr stock pot or whatever). Put the veg on the "risotto" with garlic and onion. Cheese on top like mozzarella or goat which excellent with pumpkin and beetroot. And or florentine fennel, fennel seeds, fennel herb or dill - something anise. Lots of black pepper. Serve with salad. Tomatoes in salad or on risotto. Maybe crusty bread too?

Still having a roast here! But no oven so I don't melt! Chicken in the slow cooker, frozen veg, frozen roasties in the air fryer

I'm braving a sweet chilli pork stir fry, at least it's only 10 minutes with the hob on! Prawn crackers on the side.
We all love a roast but not today. The chicken's gone in the freezer for another time.

I’m having minted lamb steak with couscous salad, feta and hummus. DD is at work all day and has requested cold picky bits for dinner, so she’s having chicken satay skewers, mini scotch eggs, a bit of leftover quiche, pitta, hummus, cucumber and peppers followed by grapes and strawberries.

I have owned my own home for over 3 decades. I have never in my life cooked "a roast", nor had one on a Sunday when I'm at home. Just eat what you feel like or what you'd eat on any other day!

Okay our salad is off the menu, dd is home from work requesting pizza which is fine as we have all the stuff in, I shall have to make my salad for lunch tomorrow instead!
