What are you all having today instead of a roast?

Usually do a full dinner on a Sunday but don't fancy cooking one when it's so nice out (and I was at a party last night so a little delicate.)

What can I make that's easy but tasty in the nice weather? Would usually do a roast chicken, new potatoes, salad etc but wondering if anyone might have any suggestions for a change Smile

Dp is going to chuck a chicken and a foil packet of new potatoes on the barbecue. A salad of little gem, peas and Parmesan and a bottle of Picboul. Minimum effort for him. No effort for me. And plenty of leftovers for tomorrow. Win/win.

We often do this on a Sunday when it's sunny www.jamieoliver.com/recipes/chicken-recipes/one-tray-bake/ - I don't bother with the olives or pancetta: just chuck chicken thighs, new potatoes, garlic and few handfuls cherry tomatoes in a tray, tear basil leaves (or thyme) over, slather on olive oil and bung in the oven until done. Dead easy and you can serve with salad.

We’re using the outdoor pizza oven to do pizzas, wedges, jackets, roast veg. With sides of potato salad, coleslaw and salad.

Had discussed earlier how none of us can be bothered in this heat.
DS has returned from a ‘quick trip out’ as a hero. Breads, cheeses, cold meats, salad and a selection of drinks - he’s even offered to grab chips later too. He’s not a bad kid.

Some of these meals sound so good! We are actually having a roast which is unusual. Chicken, garlic & rosemary roast potatoes/ carrots, broccoli, Aunt Bessie’s stuffing balls, gravy & if I can be bothered BBC Good Food breadsauce which was delicious last time. Made with double cream yummy.

Rarely have a roast, it’s just not a thing in our house. We’re having pizza because I can’t be arsed to cook.

We don’t usually do a roast in the summer. But maybe a couple times a month we’ll do a BBQ or something in the smoker.

Currently, I’m eating a veg and cheese quesadilla and everyone else has had various sandwiches. But for dinner, I’m making a cod gallego (potatoes and chorizo cooked in a broth with cod steamed on top with some green veg).

Air fryer potatoes, microwave-in-the-bag frozen broccoli and garlic butter cod steaks from the freezer.
Strawberries and ice cream.
Low on faff and high on flavour.

Chinese bbq ribs and fried rice. I did the rice and bbq marinade last night so it's super quick today.
White chocolate cheesecake with fresh raspberries for dessert.

I will be sending DH off to buy a ready-cooked chicken from the hot counter at the supermarket. We'll let it go cold and then have it with some salad and new potatoes later. I really can't be arsed to have the oven on today.

Both our local supermarkets who has in-store rotisserie counters got rid of them during covid. I'm still sad about it.

Sainsburys just used to have whole or half chickens in the main food counter but the Waitrose had a lot more variety (different marinades, you could have wings, drumsticks, half, whole, quarter or breast) and they had a salad bar too. Best lunch ever.

Anyway I digress. Although this evening will be something with chicken (I'm roasting it now)

I don't do roasts on a Sunday either. I actually find it easier to make in the week if we ever do . The meat, pots etc goes in and does it's thing while I'm busy with work or whatever weekday thing is happening.

Don't think I've ever considered a roast on a Sunday but maybe that's an English thing. I'm having a tortilla wrap with cheese and salad if you're meaning for lunch. Too hot here to have anything heavier really.

Wouldn't do anything fancy for a Sunday lunch. We did have a barbecue the other night though so that was a bit special, if it's sunny where you are you could maybe do that.

Tonight we’re having a tomato cheese and rocket tart thing, with salad and some deli bits like olives, roasted peppers etc. Doing homemade pesto for the tart because I have loads of basil to use for some reason, then will use that up tomorrow for an easy pasta dinner too.

Another good option that we had earlier in the week is a recipe I got when we were getting gousto boxes, don’t get them anymore but still use this. Basically chop up potatoes (I used a bag of the baby ones this week), put them in a baking dish, crush 3 or 4 garlic cloves (skins on) and put them in too, a load cherry tomatoes in too, drizzle with oil, salt and pepper, and in a high oven for around 35 mins. Mix up some veg stock with dried/ fresh herbs, pour into the baking dish, juice of half a lemon or more to taste, top with fish fillets (I used cod loin) and some more lemon slices, back in oven for 20 mins or so. It’s simple but gorgeous and you can add some extra veg if you want or have with salad.

We had jerk chicken and microwave mac'n'cheese. Ten minutes cooking time altogether in a south facing kitchen 😌

Fresh pasta (from Tesco), tomato and mascarpone sauce (from Tesco), garlic bread (from Tesco), salad (from fridge drawer)

Calculated the easiest meal that would require the minimal amount of heat that everyone would eat.

3 mins on the hob and 12 mins in the oven I can just about cope with today.

Love a roast but very hot today so we just had a salad, pear, blue cheese and walnut and will have meringue, raspberries and whipped cream for dessert.

Sometimes we have a BBQ in weather like this, with lamb kebabs with pepper and onions, and wild rice salad and salad.

Home made mexican buffet.

Cooker the beans for refried yesterday, obviously need to fry them up. Could do from tinned beans.
Guacamole
Green rice
Ancho chilli sauce
Diced beef for the meat eaters
