I love these thread for further inspiration.

I have a poorly household so made a hearty chilli (ish)-
Turkey mince 2% fat
Carrot
Celery
Onions
Courgettes
Spinach
Peppers .
Served with rice.

Hopefully lots of vitamins to make us all feel better!

I’m making shepherds pie tonight with left over meat from a leg of lamb I roasted a couple of days ago (it was massively reduced, so couldn’t resist buying it. I don’t normally cook a big roast in the week). I’m using mashed swede for the topping, as I’m out of spuds.

I'm doing fish and couscous parcels with trout fillets though it says white fish. I've done it with salmon and tuna steaks too - whatever's on the yellow sticker shelf. I've never used to eat a lot of fish but this is a favourite dinner now and so easy. I like fennel but you don't have to use it or the preserved lemon - just grate in some zest and a squirt of juice from a fresh one. I use more spring onions and tomatoes too.

Prawn stir fry . Nice and quick as the dcs are busy (rugby tournament, biology revision) and so am I watching virgin river 😆 until I need to go pick up after rugby!

Butternut squash curry made with butternut squash (pumpkin will work seeing as they're selling loads of them for Halloween now and you've got all that flesh left over from carving), onion, garlic and chilli (fresh, dried or powdered), chunk of creamed coconut, mild spices like ground coriander, turmeric, cinnamon and cumin, tin of butter beans or other white beans and whatever veg lurks in the fridge or freezer - potatoes, carrots, peppers, broccoli, cauliflower. peas etc. It's a very mild and creamy curry so children like it, cheap, lovely with rice or naan and I didn't realise for ages it was vegan - if that counts.

Have had beef stew in the slow cooker. It smells great, cannot wait to eat. Just finishing off some mashed potato and kale to go on the side. Followed by sticky toffee pudding with either cream or ice cream for GBBO

sweet and sour chicken with rice made from a jarred sauce. I will add chopped spring onions and salted cashews as well. I am really looking forward to it. Hopefully the DCs eat it. DS1 told me cheerfully that because they had some sort of bake sale fundraiser at school he said no to the spagetti meatballs with hidden veg and had a family sized block of dairy milk for lunch. Hmm

Dh & dd are having chicken & broccoli gratin with baked potatoes & thyme roasted carrots
I'm having roasted veg (small sweet potato, carrot, red onion,mushrooms, tomato, garlic & rosemary with chicken breast. I'd FAR rather have what they're having but I'm eating healthily aka on a diet
