I love these thread for further inspiration.

I have a poorly household so made a hearty chilli (ish)-
Turkey mince 2% fat
Carrot
Celery
Onions
Courgettes
Spinach
Peppers .
Served with rice.

Hopefully lots of vitamins to make us all feel better!

stir fried chicken, cashews and veg with rice and a fried egg on top.

I had planned to also make a marmalade bread and butter pudding but we are all absolutely stuffed.

Massive pot of lentils, spinach thrown in at the penultimate stage, and brown rice.

(Also probably lunch for a couple of days.)

Husband cooks enough for 4 so I can plate up 2 for the freezer for my elderly Dad

I cooked veggie rice ( mushroom, green beans, peppers, courgette, baby corn, grated carrots) with soya chunks. Plus pan fried potatoes cubes with turmeric. And chicken legs cooked in garlic, onion, tomatoes and cumin seeds. This is our usual Monday night dinner (also
after school quick meal before activities). It’s a quick meal to prep and cook.

Tomorrow I will cook salmon curry, pan fried moringa leaves and slices of aubergine and some fried potatoes. With white rice. Maybe some fried carrots too.

Homemade pizza with pepperoni and bacon. We started making our own during the lockdown and have just kept doing it. It's about half the cost of takeaway and much better. We buy the dough premade, which takes out most of the work.

Spag bol for the 48 resident kids at work.. kfc due to arrive in 30 minutes.. and as usual there was no gravy so I've made my own 🙄

Ds 21 and prefers cooking for himself most of the time, our mindset to food has totally shifted, quite liberating after twenty years of making sure nearly every meal was balanced and sensible.

Hope you are feeling better today, OP.

It was leftovers night for us - Boiled potatoes quartered and tossed in a bit of oil with seasoning and cooked as wedges. That went with the last of the popcorn chicken (DD), yesterday's chicken stew (DH) and a portion of roast mushroom and lentil stew (me).

Tonight it's chilli. Cuban black beans as a side dish, and diced avocado with spring onions.

We have been trialling Mindful Chef for a couple of months and have to say they are great but definitely not a cheap option so not sure we will continue.

but they are getting us out of food ruts and all include lots of veg. Bit carb heavy though when we have been trying to eat more protein.

Homemade turkey meatballs, spaghetti and garlic bread here. Am making double the meatballs to freeze for another day ready to go for an easy dinner.

I had stuffed peppers with salad last night. Tonight it's mince topped with crispy potatoes. Probably served with roasted brussel sprouts as I got some free, and maybe carrots or green beans.
