It's hot - what's for tea tonight?

I've got a pizza. Just made up some coucous which will do a couple of nights and will add salad.

My colleague is going around to someone's house tonight for tea and they're cooking a roast - no way could I stand being in the kitchen for an hour or two regularly checking meat and potatoes, as well as the hot plates on.

Doing salmon on the bbq with jacket potatoes (cooking in the microwave and just finishing in the oven so not having the oven on for ages) and salad. With a jug of pimms and lemonade - have not had it in about ten years so looking forward to it, proper summer drink!

Salmon & spinach fish cakes with a halloumi, new potato, pea & rocket salad and a lemon & mint dressing. Filling but not too much time in the kitchen.

I try to cook things earlier in the day when I’m WFH so I just need to finish stuff off in the evening when it’s too warm.

Frozen fruit, yoghurt, nuts and honey, it’s the only thing I fancy and it’s only me tonight. I loose my appetite in the heat

BBQ-d sausages and chicken thighs with Peru peri marinade.

Potato salad. Griddled gem lettuce, spring onions, sweetheart cabbage, peppers and aubergines with a creme fraiche, lemon and mustard dip.

I roasted a chicken yesterday when I was part cooking bbq food - so cold roast chicken, new potatoes and salad. It’s an extra large one but I have hungry kids so not expecting it to stretch for the week!

Picnic tea - baguette, cheeses, pate and some radishes. Wish I’d remembered to buy a big juicy tomato. I don’t feel very hungry at all in the heat, can’t imagine cooking tonight!

Sort of pizza lolly I suppose, and a big plus is running the freezer is cheaper than heating the oven.

I am always disappointed when I try making fried rice. It's never as good.

We had grilled chicken breast,(marinated in paprika and garlic) Leon Superfood Salad, cous cous and crusty grainy bread.
Olives, sun dried tomatoes and ricotta stuffed peppers on the side.
It was lovely and fresh and light.

A roast dinner 😅 my eldest DC wanted one and they've both had a tough week, both children cleared their plates including the one who usually eats about 3 foods so it was worth the heatstroke in the kitchen 😂😂

We had our last meal out of our Gousto box (DD2 gave me a code as we've never had one before). It was a Black bean and sweet potato veggie stew with salsa and rice... was quite impressed for a "ready" meal. I halved the red chilli though after using a whole one on Friday night and it nearly blowing our heads off..... sods law that tonights recipe really did need the whole thing!
