Also like to scoop out the potato, mix with veggie bacon, fried onions and cheese with a fuckton of butter then stuff it all back in and grill until crispy on the top.

It's got to be butter, cheese and beans, with the cheese really worked in to every bit of potato.
But trying to be more balanced: roasted veg and tuna. With as much cheese as I can get away with...

Butter and Longley farm full fat cottage cheese

Scoop out the potato and mix with cream cheese,put it all back. Then sprinkle with grated cheese on top and stick it back in the oven for about 15-20 minutes and it goes crispy and go!den.
It's really delicious and worth the faffing about.

Tuna mayo and spring onions. Mmm.

I once had a jacket with prawns in a load of garlic butter in a pub at lunchtime. It was about 30 years ago and I still long for the taste, it was so good.

I like jacket potatoes with butter, always - then strong cheddar and coleslaw - or tuna mayo - or strong cheddar and beans

Cheese, beans and a big dollop of branston pickle

Tinned mackerel mixed with creme fraiche, black pepper and lemon juice, with chopped gherkins mixed in as an optional yummy extra.

Oh, and homemade guacamole is another good filling. I like mackerel on one side and guacamole on the other

Green giant sweetcorn niblets and cheddar cheese everytime.

So much butter mashed in that the potato is liquid (has to have a crunchy oven cooked skin) and lots of salt. Heart attack here I come.
