Ok, not really an AIBU, but I love these threads and they always get loads of traffic in AIBU!

I am in need of much inspiration and these threads are great for it.

Have leftover beef from Sunday so making so making sliced beef sandwiches possibly with baby gherkins, onions Mayo and melted cheese or maybe with gravy and onions - not decided yet!
What do you have to hand OP?

Venison meatballs (pre-made) with pasta. Pre-made tomato and chilli sauce and will chuck on some red pepper and spinach.

I've got some chipolatas from the butchers and some veggie ones in the freezer...might also go sandwichy and make hotdogs!

I didn’t prep anything at the weekend and need something quick as I have an evening class tonight so probably pesto pasta with spinach, broccoli, peas and broad beans. One pan and most of the veg will be from the freezer as I’m trying to clear it out to defrost!

I’m making a lasagne. Will do a salad and either garlic bread or chips.

If today’s homeschooling/working goes to shit I’ll probably do both and overload on carbs!

Roast beef dinner, we ended up walking a lot further then expected yesterday and had a busy afternoon in the garden so I didnt have time to make a full Sunday dinner so we'll have it today

Yeah, we had chips last night (takeaway), so maybe potato salad, I'm thinking. The oil and dill variety rather than mayo.

Trying a new one from that Delish website ...

Tray bake veggies (shallot, cherry toms and chopped peppers) with a slab of feta in the middle drizzled with oil and dried herbs. Then when done mix up a bit and throw cooked penne in.

Sounds yum. And v easy

Roast veg and goats cheese tart using some frozen caramelised red onion I discovered in the bowels of the freezer, sheet of puff pastry, smear with pesto, onion on top, various roast veg on top then blobs of goats cheese, cook for about 20 mins until the pastry is cooked. Makes about 6 portions.

God I love Caponata. Carluccios used to make the best. I could literally eat a bowl if it with a loaf of good bread and I'd be happy Grin
