No, I don't think she killed him. They said that her husband kept a lot of money hidden and the fact that he made a comment to his friend about "if I pull this off..." Makes me think that he planned to disappear and that he had a lot of hidden money to do so. it seems he also didn't care for his children and ex so disappearing with enough money seemed the easy route for him.
Carol has championed for these animals for a long time. She nutered them when her husband was away because she was against the breeding of animals in captivity. That's the distinction that some people fail to see, that she was against the breeding and Joe was for continued captivity of these animals for commercial purposes. Joe is a sick man that abused those animals.

If Carol cared about the animals she could have asked for them when she was suing Joe Exotic. She could have looked after them properly in her sanctuary.
