What are you baking today?

Woke up at stupid o'clock and started a mental rummage through my cupboards and fridge. Have got up now leaving DP (who's 150 miles from elderly family and a bit down) in bed, and decided to make a lemon/orange drizzle cake. Haven't got a loaf tin but got something in remotely the right shape. Also only have duck eggs (as they were the last ones left when I last went shopping.) I will post a pic when it's ready....hope it's edible, don't fancy slinging out a load of perfectly good ingredients!
Anyone else baking today?

Just found an Facebook page called The Great Isolation Bake Off. I think this week is the first week. It’s biscuit week and the signature challenge is cookies.

Yesterday afternoon I made some mincemeat tarts (mince pies without lids), to use up a) a small lump of leftover pastry from the freezer, and b) part of the end of a jar of mincemeat left over from Christmas, though TBH I think it was bought pre Christmas 2018! Was starting to smell a bit ‘winey’ IYKWIM.

Just managed to stretch the pastry to 12, tasted v nice, though not many left after 🐷 dh has been at them.

I found some coconut oil in the back of the cupboard and I have a large quantity of freeze dried fruits in the larder (great for intense fruit flavoured icings and I use them to make home-made pop tarts) so I am going to make a batch of Stella Park's Top-Shelf Muffin Mix so I can make a batch of breakfast muffins quickly at a later time. This is a brilliant recipe which is shelf stable at room temperature and is easily adaptable to make any flavour or permutation you desire. I just put it into a ZipLock bag for future use.

I'll also make a batch of raspberry/lemon muffins for eating tomorrow using butter instead of coconut oil (can't use butter in the mix as it won't be able to last for any period of time at room temperature).

We are doing fairy cakes and rock cakes today. For some reason we all feel like the basics we used to have regularly when the kids are little and helped out and fought over the bowl. I don't know why even typing this is making me emotional!!!

For some reason we all feel like the basics A craving to go back to more comfortable times? Yesterday I made a really special lunch - something we'd have eaten at a good restaurant - that was our pre Covid life - almost opposite to yours but had the same effect - made everyone feel normal.😊

Can’t get any flour. I’m so gutted about this. I’ve had a few days off work, my only days off since January and then am going back to nhs work for who knows how long before I get time off again. Really wanted to make some cake as well :-(

Delicious, they tKe 13 minutes in my oven and are lovely with a cup of coffee. I had a bag of mixed chopped nuts and used dark brown sugar

We made chocolate cupcakes with Nutella buttercream icing yesterday for DDs birthday. Think we might attempt some bread rolls to go with our soup today
