Woke up at stupid o'clock and started a mental rummage through my cupboards and fridge. Have got up now leaving DP (who's 150 miles from elderly family and a bit down) in bed, and decided to make a lemon/orange drizzle cake. Haven't got a loaf tin but got something in remotely the right shape. Also only have duck eggs (as they were the last ones left when I last went shopping.) I will post a pic when it's ready....hope it's edible, don't fancy slinging out a load of perfectly good ingredients!
Anyone else baking today?

Some really lovely ideas and great baking pics on this thread!

I made a leek and feta quiche this week and have a few scraps of uncooked pastry so planning to make jam tarts this afternoon. Only have homemade blackberry jam from last autumn rather than my favourite strawberry but hope they will still taste good.

We also have several tubs of stewed apples from our tree in the freezer so planning to do an apple and cinnamon loaf cake tomorrow, which should hopefully last most of the week:

This amount of mixture is too big for the loaf tin I’ve got (and like others here I’ve got a limited amount of flour!) so will reduce quantities by a third and also just use 2 eggs as the apples are more like a sauce rather than fresh chopped ones.

Dd has made me some Gluten free scones, first try at the recipe we are going to tweek it to make them better, but still tasty with butter and jam.
Dh is making chicken and veg soup for tea.

Chorizo, sweetcorn, cheddar cornmeal muffins, eaten with homemade cream of tomato soup for lunch. Next time I might add some spring onions to the muffins too!

I baked DD’s birthday cake for tomorrow. She decorated it Grin It’s the chocolate birthday cake recipe from Jo Wheatley’s first book and is foolproof. It might be a bit big for just the four of us to eat this week though and we have no freezer space. I really should’ve thought of that!

Ohhh, so it’s you lot that bought up all the butter! I had planned to make cheese scones and lemon drizzle but couldn’t get any butter the last time we went to the shops so I’ve not been able to do any Envy < defo envy!

Plenty of butter in the shops in my area. I think the panic buying may have settled down alittle so hopefully you will manage to get some on your next visit.

*@HaddawayAndShite I've been buying 2 blocks of butter a week since Christmas & freezing them. They last around 6 months if not more so its worth trying your milk man for butter & doing the same.

I have found a bag of gluten free flour in the back of a cupboard. I should not be this excited. I need a good recipe for gf scones and gf hot cross buns.

I haven’t made anything today but I made Delia’s Mincemeat Cake with mincemeat that I made for 🎄 Christmas.
I made it in a loaf tin and a tiny tin. We ate the tiny tin one and have a full one left. The day before I made a Barm Brack that I used to make the kids for packed lunch.
I’m on Day 12 as someone working here child had it.

Last night we managed to get a Tesco slot and so did my BF as I texted her straight away. There was no plain flour. I always have two bags SR flour and I have two bags of bread flour but no yeast. Well I have some that DD left here last year and it is out of date.
We had no bread or milk and only onions and potatoes left. Now we have enough food to last us for months. We were allowed 80 items no more than 3 of each which we only used on one item.
Great idea for a thread OP and I am impressed with the photos.
I love baking. Woman’s Weekly has a delicious chocolate cake recipe which I might make next month as it is my birthday. I will be sad not to see my kids as I didn’t see them on Mother’s Day either. DS2 came briefly to hand over a card and a bottle gin.

If you don't have any yeast, you can make your own sourdough starter - it'll take a few days, but can be kept going indefinitely:

A pp told me further up thread that you can use bread flour to make scones if that helps anybody. I managed go get a small 1kg tub of SR flour but still no plain.

On Friday made bread in the breadmaker my mum gave me ages ago, but I had never used. It died & shorted the electrics Shock So yesterday I used the failed bread from that to make bread-and-butter pudding & made a fresh loaf by hand.

Today, DS1 (11) has made a veg soup under my supervision, using up veg that needed eating. I hope to make apple & pear crumble later with wrinkly fruit. Also, will turn potato peelings from tonight's mash into crisps.
