What’s everyone had today? Shamelessly looking for inspiration!

Tonight was moussaka, falafel, hummus, baba ghanoush and salad with pitta.

I had rice noodles with coconut & lime. Loads of veggies. Delicious 😋

I had falafel salad for lunch.

Dinner was LM sausages, roasted carrots, bubble & Squeak (potato & sprouts) with a fried egg on top.

Richmond meat free sausages chopped up on pizza fries. My version of Pinch of Nom Pizza Loaded fries. For DD mainly. The sausages are my absolute favourite veggie ones.

For tomorrow I have cooked some spiced red cabbage and some celeriac and parsnip bake (need to top it with crushed almonds and breadcrumbs) to go with something.

Aubergine and cauliflower curry. The sauce was the leftovers from a thick soup I made the other day (curried carrot, swede and squash) with added coconut milk.

It was much nicer than it sounds!

Veggie roast dinner: roast potatoes, parsnips, root vegetables mash, Yorkshire pudding, stuffing, carrots, broccoli, leek and cabbage with gravy! 😋

LM country pie with mashed potatoes & green beans.

Really tempted to make lasagne tomorrow but not sure I'm up to it. I'm getting over a really nasty cold which has given me a huge appetite strangely!

Yesterday DH made a vegan lasagne. It took 3hrs to make and DC didn't like it. I liked it except for the taste of vegan cheese. (DH is vegan, DC and I are not).
Today I am making a 'chicken' and mushroom pie with veg and mash.

Yesterday was macaroni cheese and LMcC sausage rolls. Not a vegetable in sight.

Today we're making up for that. Full on veggie roast.

@MeatFreeSausage those Richmond veggie sausages are bloody amazing aren’t they. I used to like the LMc ones but they have a weird fatty and farty taste now Envy

Last night I made a ploughman's - cheese, pickles, bit of salad, crusty wholemeal roll, quorn ham, quorn scotch egg and an apple.

Today is an aldi vegan beef pasty with mash and green veg. (DH and DC aren't veggie so they are having a big meat pie to share)

I'm making aubergine parmigiana and the BBC's bean chilli for the freezer this week.

We've been using No Bull No Chick chicken strips for fajitas this week. They're pretty good.

I'm also going to attempt a chorizo taste to make butter bean, courgette and "chicken" stew.

Another favourite is Thai vegetarian curry with coconut milk.

I made an epic dinner the other night. Chopped up whatever veg in the fridge (happened to be squash, red pepper, courgette) chucked in a tin of chick peas and about 1 or 2 table spoons of harissa.
Roasted it, then put in an Aldi packet of rice, quinoa and seeds. Back in the oven until warmed

Bit of grilled halloumi on top.

Served with a lime and harissa yogurt goop I made.

It was one of those tasty dinners you keep going “yeah that was good” all night.

Baked tomato rice - rice with jarred artichokes and jarred sun dried tomatoes, crunchy salad with loads of bits like red onion, olives and sprinkled feta on top - yum!

I also can’t tolerate soya/fake mince and meat substitute for some reason- makes me 🤢

Tonight we are having (batch cooked and pre frozen) chilli con carne but with Mexican beans and a veggie chilli for me!
