What’s everyone had today? Shamelessly looking for inspiration!

Tonight was moussaka, falafel, hummus, baba ghanoush and salad with pitta.

We do meat free Mondays where I have been experimenting with various recipes. A successful one was buffalo cauliflower. Really tasty though I'd try a different recipe as it wasn't crunchy.

I shall save this post to get some more ideas, which I can hopefully start using through the week not just on a Monday.
@MeatFreeSausage are those meatless Richmond sausages similar to the meat ones in texture? I use the meat ones in spicy sausage puttanesca but it would be nice to make it meat free, with an anchovy alternative.

Tonight is the left over non meat meat loaf which has been in the freezer, along with all the roast dinner trimmings.

Longtompot I haven't had the meat ones but the meet free ones have a smooth texture and a nice peppery taste.

Pizza turned into vegetarian burgers as Lidl had no mozzarella.
Tomorrow will be quiche as I have cream that needs used and I think aubergine lasagna on Tuesday.

Just had terrible sausages from the Tofoo Company. Stay well away. I do like their smoked tofu though.

Aldi spicy vegetable parcels with roast butternut squash and steamed veg. DD had a Linda McCartney sausage and potato waffle with the veg as she doesn't like spice.

OK slight mix up from the freezer - tonight was full roast dinner with..

bolognese sauce.

Didn't realise until I was dishing up!

Must get better at labelling things in the freezer. It also begs the question of where on earth did I put the "meat"loaf

We're a mixture of vegetarian & vegan in our house so I make lasagne using soya milk/flora buttery for the white sauce with an oxo stock cube crumbled in. No vegan cheese though just breadcrumbs & dried herbs on top. Really tasty!

Had egg, chips & peas last night.

Making lentil & vegetable stew with dumplings for tonight.

We tried hot dogs from Sainsbury's for lunch yesterday which were brilliant! Think the make was Moving Mountains. £4.50 for 4 hot dogs which is pretty pricey in my opinion but a nice treat for the kids.

Sainsbury's used to do their own frozen veggie hotdogs which were really good. I'm so cross that they've disappeared.

Tescos & Sainsbury's used to do bags of hot dogs that my DC (& their friends) used to love. We've been searching for an alternative for ages. Tried the Frys ones but they weren't keen Sad

I'm not veggie but I try and have a vegetarian meal once or twice per week. My go to is a veg risotto in the instant pot. Really easy to make and tastes great.

Saute onions and garlic in some oil.
Add in 250g risotto rice and saute for about 5 mins;
Add a tin of chopped tomatoes and 300ml vegetable stock, paprika and mixed herbs then whatever veg you fancy - I usually go with mushrooms, runner beans, broad beans, peas, carrots, butter beans and sweetcorn. Salt and pepper to taste. Cook under pressure for 10 mins, NPR for 10.

If you're not completely veggie a couple of spoonfuls of parmesan cheese melted through really enhances the flavour but is by no means essential.

I should add that all my veg goes in frozen. If not I'd add them half way through to avoid them going to mush.

We are having a sort of Indian version of cottage pie, basically Dahl with added cauliflower, spinach and chickpeas baked in a dish with a thin layer of sweet potato mash until it’ brown and crispy. Sounds weird but is surprisingly tasty.

We had veggie curry (Thai style-ish)with rice and stewed plums and yogurt for pud.

I've been veggie for years, but having to rethink a lot of stuff I do because I live with DD and she has a medical condition that means she can't eat onions, garlic, celery. So things can be a bit lacking in flavour. She likes spicy food though - so we have quite a few curries/chillis/ tofu marinaded in ginger/chili/lime etc.

Tonight I'm having a mushroom and spinach bake with roast vegetables.

KurriKurri I can't eat onions either (IBS) so have to leave them out when I cook. As you say, it can make things a bit bland.

Lunch was an amazing onion soup with cheese croutons made by my 15yo.
Dinner was leftover plant based mince stew thing with leeks, carrots and peas served with mashed cauliflower which may be my new favourite thing.
