What’s everyone had today? Shamelessly looking for inspiration!

Tonight was moussaka, falafel, hummus, baba ghanoush and salad with pitta.

Stir fry with veggie meatballs. I do 5:2 and that fits.

Yesterday was veggie burger with vegan cheese and potato wedges and hummus.

Delia's spinach and ricotta lasagna. Made loads of substitutions. Still tasty. Served with red cabbage and garlic bread. X

I hope no-one minds me lurking on here - I need some inspiration. Ds1 and his girlfriend (who is vegetarian) are coming for a visit in April, and I want to make some lovely meals while they are here.

Previously, when they visited, I made a veggie Thai curry one night, mushroom risotto another, and two different quiches on the third, and I’d like not to repeat myself too much.

I’ve been looking at Jamie Oliver’s vegetarian recipes, and there are some nice ones there - his sage, squash and sourdough bake looks nice - but would it be a ‘proper’ main meal (with salad or veg)? I was also thinking about a roasted butternut squash and blue cheese risotto.

We had white wine lentils with roasted cherry tomatoes and creme fraiche.

It didn't look like that picture and had the consistency of a thick soup but tasted nice thanks to the 'bacon'

Cauliflower cheese, sweet potato wedges, red cabbage slaw & salad. Slightly random collection of things, but very colourful & tasty.

Lunch was 2 snaffled egg breakfast muffins that I was batch cooking for next week quick breakfasts.

Dinner was Iceland no bull mushroom steaks with celeriac and cauliflower mash and a mix of steamed greens. The steak wasn't very nice and I won't be in a rush to buy it again.

Tonight we had wraps with falafel and fried hallumi with chilli mayo, salad, rice and onions in chilli sauce. Love it and so quick and easy.
