What’s everyone had today? Shamelessly looking for inspiration!

Tonight was moussaka, falafel, hummus, baba ghanoush and salad with pitta.

3 cheese, veg packed pasta bake

"Rigatoni Fiorentina" - a made-up recipe inspired by my favourite pasta dish from Pollo restaurant on Old Compton Street late 80s/early 90s.

I make a classic Italian tomato sauce (sometimes add mushrooms if I feel like it or have some in the fridge to use up, but no bother if there aren't any).

In the last couple of minutes I'll wilt a bag washed baby spinach leaves on top of that pan of sauce.

Mix with freshly cooked rigatoni or penne pasta, cooked slightly less than al dente.

Put in large oven baking dish, the sort of thing you'd make a lasagne in. Top with cheese - can be mozarella, grated cheddar, grated parmesan or any combination of those.

Return to oven turned up high and heat through until cheese is browned, perhaps about 10 mins.

Whole roasted sweet potato with taleggio, red onions and basil dressing.

Lots of things in tins from Lidl Greek week. Plus a fresh Greek salad, crusty bread and houmous.

Tonight was aubergine lasagna again, because it’s soooo good. Just had salad with it.

Is that the Jamie oliver one sexnotgender? That’s a great favourite here.

Macaroni cheese with salad last night.

Individual toad in the holes with mash, veg & gravy.

Garlic mushroom burgers. Basically those big, flat mushrooms grilled with a sort of garlic butter and cheese mixture melted on, in rolls with salad and chips

Egg-fried rice with green beans and sesame. Very tasty!

Spaghetti with a garlicy mushroom sauce.
