What’s everyone had today? Shamelessly looking for inspiration!

Tonight was moussaka, falafel, hummus, baba ghanoush and salad with pitta.

DC are having jacket potatoes with baked beans & cheese with salad tonight.

DH & I are having mushroom curry with a few quorn nuggets on the side.

Should have said I also added finely chopped mushrooms and a little sad courgette to the aubergine. It’s a great recipe for using things up. Last time I made it I added some sad spinach.

The burnt aubergine chilli was delicious, I put a load more chilli in it than the recipe though.

Tonight was chickpea, sweet potato and coconut curry.

My DD made tortilla pizzas for her and DH, we've started giving the kids a night to cook each to try teach them some life skills lol!

I did a pizza omelette as I didn't have enough carb allowance for tortilla. Small 2 egg omelette in my mini frying pan with mozzarella and cheatin pepperoni slice with a side salad. Was lovely!

@Sexnotgender I always put more chilli in than the recipe calls for. Same with garlic!

This week we've had:
Pasta with a Gross Lloydman jar of sauce and garlic bread.
Burritos
Garlic and balsamic roasted aubergine, fennel, tomatoes and red onion with papardelle yesterday.
Spanish(ish) chickpea and red pepper stew with crusty bread.

I’ve just had an artichoke (tinned artichoke hearts) risotto. I cooked the hearts in garlic and lemon juice then grilled them so they had a bit of char. Then cut and added to basic stock/wine/Parmesan risotto.
Not as good as I was hoping. The artichoke was underwhelming. Shame I got a sudden urge and thought it might work.
I have however eaten masses. Pasta or rice dishes i can just eat remarkable amounts - forget ever leaving some for tomorrow !

Having cauliflower garam masala tonight. Smells so good. I’ve just got in from work so the teenager is cooking it.

Veggie chilli with rice - made up the ingredients but involved beans & sweet potato. Chucked in an extra tin of aduki beans after work to make it stretch a bit further and for some magic reason that made it particularly good. Went down well with kids.

Atleastitsnotmonday your idea of Indian inspired cottage pie has gone straight in to my must cook recipe stash. I tried it with some random leftovers and it's perfect for my vegan teen. It's brilliant, thank you :)

We had gnocchi - boiled, then baked with a punnet of halved cherry tomatoes, a few hands full of spinach and some mozzarella.

Pizza last night - four cheese for DC & DH. Aldi vegan jackfruit & peppers for me - really nice!

Thinking of making macaroni cheese tonight - a vegan version using flora buttery & soya milk to make a white sauce.

When it's made I take my portion & crumble breadcrumbs & dried herbs on top & put under the grill. The rest is covered with cheese & put under the grill.

We have tomatoes, cucumber & peppers with it.

It really is. Pre vegetarian I didn’t think I like aubergine 😂
My fussy 16 year old even loves the lasagna, we’re often fighting over the last piece.

We are ordering from my favourite Chinese tonight. They are partly vegan and have all the veggie meat subs on their menu. Fake chicken (we call this Ficken), fake pork which we call Fork and fake duck which we call.... well I'll leave that one up to you lot 😂
