New thread for a new year!

A diary thread for our daily meals, to record, share, glean menu inspiration and chat, but no judging each other’s food choices.

Ashamed to say using a leftover Tesco substitution from Christmas, had it last year and it was acceptable. Sorry, no recipe :(

No shame should be felt, @Redpriestandmozart, always good to get recommendations! Nut loaf can be a bit of a pain to make too.

I hadn’t made it for years but then came across a tasty and reasonably straightforward recipe, so I’m considering branching out into other recipes... not actually done anything about it yet though Grin

@AwkwardSquad what recipe do you currently use? It's been a few years since I made one from scratch, but always open to new ideas :)

AwkwardSquad · 12/01/2020 18:44

It’s this one thinlyspread.co.uk/chestnut-cashew-nut-vegan-christmas-roast/ (keep scrolling to get to the actual recipe)

It works best if baked in a bundt tin.

I altered the spices a bit - half a teaspoon or so of urfa (smoked chilli flakes), teaspoon of freshly toasted and ground cumin, and only one teaspoon of paprika.

Today I had muesli etc with blackcurrant coulis, and tofu scramble with small portion brown pilau for lunch. Then a couple of pistachio macaroons and some tortilla chips in the afternoon. Spinach and ricotta tortellini with pesto, parmesan and rocket for dinner, followed by a pear. And probably another macaroon.
