New thread for a new year!

A diary thread for our daily meals, to record, share, glean menu inspiration and chat, but no judging each other’s food choices.

Let’s include some recipe-sharing in this thread Smile

B Buttered Toast
L. Two poached eggs, two slices of toast, truffle oil and spinach
D. Stirfried veg with ginger, turmeric rice
S. Numerous chocolate rice cakes with almond butter

B - Two slices gf cinnamon raisin toast with Marmite peanut butter (my last two slices. Wonder when I can get my hands on this relatively rare product again Shock), Caffe latte

L - Leftover salmon fillet tossed with capers, sauteed courgette (previously frozen by my refrigerator's crisper drawer), and gf fresh tagliatelle (yet another product I despair of seeing again soon)

S - The rest of my daughter's abandoned bowl of Campbell's cream of tomato soup

S - The rest of my daughter's abandoned breakfast cookie

Strong tea with milk and honey

D - 4 chicken goujons with barbecue sauce. A small amount of leftover mash. Buttered peas.

S - 4 Finn Crisps with hummus. A few bites of apple (again, consisting entirely of apples my daughter has abandoned) with sauteed with brandy, butter, and raisins. Will eat the rest tomorrow.

I'm noticing an increasingly scavenging theme in my posts. Waste not, want not, I suppose.

Same here. The gf bread I baked doesn't stay fresh long so using it up and eating far more toast than usual.
You could look out for hot cross bun loaves which can be similar to cinnamon and raisin bread (or just eat hot cross buns Brew).

L - me - jacket potato, beans, lettuce, dd home made carrot & coriander soup & bread
D - bacon, salad potatoes, peas, bread, dd quorn steak slice, baked beans
S mini chocolate brownie. May have some chocolate later

L: bagels with cream cheese (me) and added ham for the DC.
D: Chilli from the slow cooker, rice, grated cheese, sour cream and tortilla chips.

@BloomedAgain I am very intrigued by this hot cross bun loaf product. Not sure I've seen it before but I'm all for it! We seem to be food twins, and you have reminded me that I saved a gf bread recipe a while back!

B - Caffe latte, 85% dark chocolate
L - deli ham, 5 Finn Crisps (I'm not allergic to rye), hummus, little gem salad
S - cup of tea with sugar and milk. Some little pieces of cheese. An apple sauteed with brandy and raisins
D - spinach sauteed with chili and garlic, fillet steak with mushroom sauce, mash

Joining in if I may? Slightly worried that I’m not eating enough veg at the moment so sharing what I eat each day might motivate me to be a bit more creative with what I have in. Today I’ve had:

Toast and butter
Ham & cheese toastie (using the crusts, which I almost never eat)
3/4 pack of Jaffa cakes
Pack of smokey bacon crisps
Homemade chickens &spinach curry with rice (veg!)
2 small glasses red wine (grapes!)

B Bagel with 1/2 avocado and poachers egg

L baked potato, tuna/avo topping and large side salad and alpro choc yog

D spectacularly shit sweet and sour chicken ready meal

Snacks: 2nd bagel, mini chorizo bites, 1/3 sharing bag of crisps, Duvel beer.

Yesterday...
B: Greek yogurt, fruit (banana, blackberries, raspberries), chopped nuts & honey. Toast with almond butter.
L: tuna melt wrap, with salad.
S: lots of chocolate/biscuits
D: pasta with tomato and basil sauce , and parmesan
Hot chocolate in the evening


Today...
B: muesli with banana and berries. Toast with peanut butter.
L: deli roll with cheese and tomato, and salad.
S: two biscuits
D: baked potato with beans and cheese
Just had some natural yoghurt, and dark chocolate

Need to gain half a stone least but finding it difficult.

@dellacucina Yes! I've only seen gluten versions of hot cross loaves this year e.g. www.warburtons.co.uk/news/article/spice-up-your-easter but I'm going to use an adapted gf bread recipe to make my own (I make gf hot cross buns).
If you lived close I'd send you some.

Yesterday
B Two slices gf toast
L Lots of cheese and crackers (tbh lunch seemed to last all afternoon) until ...
D Salmon with stirfried veg and turmeric rice
S Banana, 90 per cent chocolate, ridiculous quantity of rice cakes and almond butter

I've just baked a huge crustless quiche to use up the veg I have left, so that's going to feature heavily today. Just finished making some gf pastry which will become some chicken and leek pies for the freezer.

Nutty adding in (more) regular spoonfuls of almond butter between meals could help if you need to get some more calories in. Not that I have an addiction Grin

@Nuttyaboutnutella I've got 6kg to gain apparently, and I've lost my appetite with stress. We got this!

L- itsu katsu instant noodles (I keep a stock of these at work)

D- teryaki beef stir fry and wholemeal rice
S- hot cross bun and butter, two celebrations

B - two vegan breakfast cookies, huge caffe latte
L - a few Finn Crisps, slice of cheddar, 2/3 a small packet of deli ham, little gem salad, a few grapes
S - some prunes and dried apricots, cup of strong tea with milk and sugar, a few squares of 85% chocolate
D - roasted cauliflower on a layer of tahini/lemon/garlic sauce, sprinkled with flat leaf parsley and pomegranate seeds. One chicken goujon.
S - homemade apple chips

Ooh I like the look of that @dellacucina especially setting the crumb with egg white rather than using various gums. I have most of the ingredients somewhere too (in various stages of sell by dates). I enjoy inventing and adapting recipes because I miss some gluten products like hot cross buns, Chelsea buns etc.

I'm making meals an event as I'm 'shielded' but desperate for a walk. Still working full time from home, bigger workload than ever, so at least cooking is something else.

So today

B buttered toast, banana
L crustless quiche with more toast
D chicken breast, Greek stuffed vegetables with lots of fresh dill (gemista)
S some crisps, cream cheese and almond butter with ricecakes

I'd look better with about 3-4kg, my face looks thin and gets worse when I'm tired. I'm trying but like you, lose me appetite easily when stressed. My problem is running around my two very busy small children all day long! I already eat nuts, have whole milk, full fat yoghurt and cheese, etc. I'm simply on the go too much but not going to let up anytime soon as my youngest isn't even 1 yet.
We'll get there!

D: battered fish, homemade chips and peas
Had cheese & crackers and a glass of wine in the evening

Today--
B: Greek yogurt, fruit (mango, kiwi, raspberries), chopped nuts and honey. Toast with peanut butter.
L: cheese & onion quiche, ham, salad, and coleslaw. Strawberries and ice cream.
D: cheesy broccoli pasta bake

Having a glass of white wine as we speak and will have some dark chocolate later

B: scrambled eggs on toast, orange Juice, coffee
L: falafel, quiche, hummus, roasted vegetable couscous, rocket and tomatoes. Grapes for after.
S: two chocolate biscuits
D: beef burgers, homemade chips, and salad. Hopefully soon as I normally eat at 5ish with the kids so I'm ravenous. Will obviously have to fill up on wine in the meantime Grin
