Shiny new thread, continuing from here

A diary thread for our daily meals, to record, share, glean menu inspiration and chat, but no judging each other’s food choices.

Breakfast - coffee.

Lunch - Thick slice of bread with lemon curd and cream cheese, small handful of jelly beans.

Dinner - chicken breast flattened with the tenderiser and breaded, mashed potatoes, green beans, peas and a bit of cauliflower cheese.

Dessert - scoop of rum and raisin ice cream in a waffle cone.

Snacks - 2 satsumas.

I seem to be absolutely ravenous all the time at the moment, struggling not to over eat! Has anybody else ever experienced this?

@AwkwardSquad how did you cook your tofu? I’ve tried it a couple of times but haven’t been able to enjoy it so far!

Breakfast - Orange and apple

Lunch Parsnip and apple soup. It was gorgeous (no cream as it was vegan). With a chunk of malted bread. Was in a very naice cafe

Dinner was salad with goats cheese.

Snack. Large piece of Victoria Sandwich cake with fresh strawberrys. And lots of satsumas throughout the day

I go through phases like that too. You could try upping your protein?

I roughly followed the recipe on the thread a while back. I used Cauldron firm tofu and squeezed out a lot of the excess liquid, then broke it up with a potato masher. Sautéed chopped onion, garlic, chilli till lightly golden with light olive oil and a bit of smoked rapeseed oil for extra flavour. Added minced ginger, cumin, turmeric. Chopped chargrilled peppers from a jar. Added the tofu, gave it all a good stir and cooked till hot through, pressing down to give it a bit of a crust. Squeeze of lime and some za’atar (eccentric mix of spices and flavours but it seemed to work!).

But I do actively like tofu so I was predisposed to like this - if you’re not really a fan, I’d probably not bother. Lots of other lovely things to eat!

L- itsu katsu noodle pot
S- pop chips
D- chicken breast cooked in soy sauce and garlic, pitta bread and roasted root vegetables

Good idea, Thank you Smile I think I’m going to have to write a meal plan for the next 2 weeks as next week DC and me are all off and will be doing lots of fun things and no doubt I’ll be very hungry!
The tofu recipe sounds delicious but you’re right, maybe I’ll give it a skip. I was vegan for a while so really wanted to like it but I just couldn’t unfortunately!

B: muesli with milk, mixed berries & honey
L: ham, pepper, cheese omelette with salad. Piece of chocolate cake
An apple
D: quesadillas. Also had a pear and shared and banana with toddler

Going to have some hot chocolate and some nuts now. I'm starving!

DP ate my pistachio nuts 😠 think it's time to LTB!! Can't even have toast as the bread knife is in the dishwasher. Had some banana bread but still hungry and there's not much else here to snack on.

L - spicy carrot and coriander soup with yogurt, mini naan bread, rice crackers, apple
D - Welsh rarebit (2 slices), about to have a mini Twix

Made the mistake of reading a thread about puddings on here and now all I want is apple crumble....

B - 2 crackers with half an avocado and sliced cucumber

Snack - 3 tblsp Greek yoghurt and some raspberries

L - leftover dhal and small portion of rice with stir fried cabbage and cauliflower

Snack -banana

D kale, lentil and beetroot salad with half a small baked pumpkin

Breakfast overnight oats made with natural fat free yogurt, semi milk, strawberries, raspberries and blackberries.

Snack banana

Lunch mixed leaf salad with hard boiled egg, smoked ham, baby plum tomatoes, cucumber and light mayo.

Snack pear

Dinner shepherds pie containing mixed veg with baked beans.

Am starting to feel more human

B: turmeric and blueberry overnight oats
L: mashed potato and pesto, vegan cheese
D: mushroom soup and masticated raspberries

A friend came over this evening just for an hour and my jaw really hurts from all the talking!

Lunch - a cheese and onion slice/pasty. Wasn’t very nice but I was so hungry and had to eat on the go between working and Ds’s afternoon school event with one little corner shop to choose something from.

Dinner - Baked conchiglioni with a bolognaise/lasagne type filling and topped with crispy bacon, basil and mozerella served with a salad.

Dessert - A scoop of rum and raisin ice cream in a waffle cone.

Snacks - 1 slice of buttered bread filled with crinkle cut salt and vinegar crisps.

I’ll definitely be making it again, @IJumpedAboardAPirateShip, and it reheated very well in the microwave for lunch, too.

B - three oatcakes with peanut butter; apple
L - tofu scramble leftovers, cucumber and cooked beetroot salad with fennel herb, lime juice and za’atar
Quite a lot of grapes and an oat molasses cookie
D - Mediterranean style fish stew, freshly baked roll, little bit of butter; small square of beetroot brownie

Mmmmmm crunchy goodness... have you tried the Co-op seasalt and Chardonnay vinegar crisps? They are the boss of salt and vinegar crisps.

Snack - banana
Dinner. Homemade breaded turkey fillet with mash of broccoli, butter beans and pesto. Slice of bread

@AwkwardSquad no I’ve not tried them, I’ll buy a bag when I next pass the co-op! Salt and vinegar are mine and youngest ds’s favourite!

I have to confess and add on a jam doughnut and a coffee as an evening snack Blush.
Popped to the shop at a lucky time and bought lots of yellow sticker food including a huge tray of chicken breasts for 89p, huge tray of diced pork for 64p and a load of different fresh fish fillets for 50p each!
The doughnuts were reduced down to 20p so I couldn’t turn them down Grin

I would like to be well again, I’m eating crap food

B: turmeric and banana porridge
L: loads of hummus and loads of vegan cheese
D: tried some of DC pasta and it was pretty soft so I managed it ok. Then ate half a tub of pistachio ice cream.
S: just had a hot honey and lemon drink
