Shiny new thread, continuing from here

A diary thread for our daily meals, to record, share, glean menu inspiration and chat, but no judging each other’s food choices.

Hmm, I’ve got some tofu, might try a tofu scramble for a change.

B - muesli, flaxseed, stewed apple, yoghurt (predictable...)
L - the other half of yesterday’s goat cheese and walnut pastry pie with beetroot salad and chutney; cucumber sticks and kiwi slices
An apple; two Nairn’s oat chocolate biscuits
D - courgette and chickpea stew with small portion brown rice, topped with yoghurt, za’atar and a drizzle of pomegranate molasses; slice of banana bread; a square of coconut and lime chocolate

B- apple and cinnamon porridge pot
L- bagel thin with smoked salmon and cream cheese, apple from my tree
S- popchips
S- 2 finger kitkat
D- spinach and ricotta tortellini with some olive oil and parmesan cheese, salad
S- 2 crumpets with rhubarb and vanilla jam, handful grapes

Mmm... crumpets - it's definitely crumpet weather here today. Adding them to my next shopping list!

Today was:
B - oat crisp with milk, pear
S - some nougat with almonds left from hols
L - hummus and salad with pitta bread, kiwifruit, apple
D - fish pie, peas, sweetcorn, garlic bread

Cheese and crisp (tomato and balsalmico flavour) crisps sandwich made with two slices of toast rather than normal bread, and a handful of pic n mix

Two chocolate digestives and about a third of a mango

Kinder bueno ice cream bar

Potato and corn chowder with crust bread and rucola

Toast with pate and a few frozen grapes

OMG these posts are making me feel unhealthy 🤣 currently pregnant with DD2 and for my lunch I had tomato soup with 30000 slices of bread and butter. Hehe

@lastqueenofscotland Mesir wot sounds good and I love lentils. Google says Steenbergs does a berbere spice mix, I shall look out for it.

@AwkwardSquad what is tofu scramble? I’ve tried tofu and really didn’t like it but would try again if there was a way to make it taste of something!

B: porridge with blackberries, almond and honey
L: beans and cheese on toast (was craving this so badly!) An apple.
D: beef curry and rice, glass of red wine

Tea and water to drink throughout the day

B: small bowl of porridge, half a slice of buttered toast, half a cup of black coffee.
L: Gregg's sausage roll, slice of buttered toast.
Mid-afternoon: one bite of cheese scone, a few sips of tea.
Supper: cod and chips! We had my DB and one of my cousins round, and I wanted to feed them, takeaway seemed like a good option.
Just going for eating whatever I can manage - fish and chips surprisingly palatable although I couldn't really taste the fish. So looking forward to enjoying food again, should be much better by the end of the week.

@Phycadelicsilhouette I know ho you feel, it’s taken me a while to find ways of cooking tofu how I like it! A scramble is basically crumbling it into a frying pan (after pressing for 30mins to get rid of excess water) along with usually peppers, onions, mushrooms - add plenty of seasoning (I like mixed herbs and turmeric then dousing it in hot sauce) but I find the key to liking it is letting chunks of tofu brown well on one or two sides to add more texture than just soggy sponge!

I didn’t actually have any tofu in so I made tempeh scramble in the end for dinner, crumbled and marinated it in soy, dried oregano and thyme, garlic and lemon then fried up with spring onions, sliced mushrooms, yellow pepper, black beans and garlic, chipotle in adobo and more lemon juice. Was delicious and DS wolfed it down too - and I have enough for leftovers tomorrow!

L: steamed broccolini tossed in tahini and lemon
S: iced oat milk latte
D: tempeh scramble, a handful of dates, 3 ginger biscuits and a cup of tea

Was all going so well!!

Excellent plan, the important thing is to get some calories into yourself for energy and hopefully some enjoyment as well. Not had the experience of chemo but have fluctuating condition which means that sometimes I find it very difficult to eat, and I take the same approach at those times - just eat whatever I can bear to, to keep going until it improves.

B- porridge made with cream and full fat milk, a sprinkle of brown sugar. Coffee

L- chicken and stuffing salad sandwich. Bag of salt and vinegar crisps

Dinner later will be home made chicken Kiev, paprika wedges, tender stem broccoli, peas and green beans. I’ve not made chicken Kiev’s before so I hope they turn out ok, normally I’d buy them but had some huge breasts from the butchers and my cooking program last night the chef was making Kiev’s so I just had to try making them tonight.

@bloodybridget thank you for the luck too, cod and chips sounds amazing! A pea fritter, a curry sauce and a can of shandy with it and I think that may well be my favourite takeaway of all time! How are you feeling today? I hope food has been enjoyable!
@IJumpedAboardAPirateShip thank you for the advice. Maybe I’ll try again. I have previously attempted veganism but didn’t go into it for the right reasons so returned to meat and dairy but I would like to try again for the right reasons soon, maybe come the new year!

First day was great! Loved it. Not much time to eat though. Food today has been...

Breakfast - coffee

Lunch - a handful of salt and pepper crisps and a blueberry nutrigrain bar (I hope they run out soon, both my DC didn’t like them so I’ve been eating them although I don’t really like them either! Can’t bear waste!)

Dinner - soon to be.... beef and red wine stew with mashed potatoes and Yorkshire pudding.

Dessert - will be... salted caramel ice cream in a waffle cone.

Snack - a few twirl bites.

I've had:
B: small bowl Fruit and Fibre, few mouthfuls of black coffee.
L: two slices of cheese on toast, half a cup of tea.
Supper: burger, oven chips, baked tomatoes. I don't know how this will work for me!

Breakfast - toasted bread with grated tomatoes and a sprinkle of salt (in Spain - it's very normal here)
Lunch - big salad with a dollop of hummus
Snack - breadsticks
Dinner - DDs leftover pizza Grin

Bit carby.... but we are low on stocks and need to do a big shop.

Justa my DH often has toms on toast for breakfast - he has garlic salt on his!

Today has been nearly identical to yesterday
B - oat crisp, kiwifruit
L - last of the hummus (finally!), toasted pitta, salad, seeds, apple
Snack - veggie spring roll made by DS
D - whatever DH brings back on his way home from work (probably something random).

L - squash and lentil soup with rosemary crackers; a sliced apple
D - smoked mackerel with beetroot apple salad, coleslaw and beetroot chutney; slice of banana bread (DP mistook rosewater for vanilla extract so it’s a tiny bit odd...)
