Need some inspiration on weekday dinners so I can make a list 😊
What are you/your family having tonight?

I've made a shepherds pie with veg and Yorkshire's 😋 can't wait to tuck in.

A tray bake with chicken breasts, potatoes, peppers, red onions, vine tomatoes and some lemon juice, chilli and rosemary. Serving with some green veg and aioli.

I've made a chicken, leek, bacon and mushroom pie. I'm going to serve it with roasted new potatoes and broccoli.

I've made a soup/stew type dinner to use up wilting veg. I suppose loosely based on a whitr bean and kale soup recipe.
Savoy cabbage, mixed beans, tin of tomatoes, a leek, carrot, celery, garlic, oregano, pepper, stock, smokey chipotle and a squeeze of lemon.
I'll do some cheese quesadilla, cut in triangles to dunk.

Chicken stir fry with a cheats satay sauce (good quality peanut butter, soy sauce and chilli jam) with some rice noodles.

It's delicious and tastes very indulgent

Watching with interest...so sick of cooking the same bloody things!

Tonight is lasagne and this week so far we’ve had:

Chicken fajitas
Shepherd’s pie
Chicken breasts stuffed with Boursin, wrapped in prosciutto with mash and green beans

Tomorrow is chilli con carne....unless anyone here can inspire me otherwise...

I've got a friend coming round to eat, so I'm doing an Italian cold meat platter with Parmesan shavings, sliced black tomatoes, and black garlic to start with, followed by cod and prawns baked with Comté and a spicy/herby basil/tomato sauce, plus a side salad, then affogato and chocolate almond biscotti for pud. Not my typical night's eating - and I'm low carbing too, so am having my espresso plain, no ice cream for me :(
