My favourite classic recipe is sherry triffle. Swiss roll in the bottom with extra jam and a big splash of sherry, then at this time of year I will do a mix of grapes, kiwi and frozen raspberries, loads of homemade custard and a thinner layer of cream on top. Will make it for Christmas - it’s always goes down well.

My favourite is cottage pie- just mince, onions, carrots, tomato purée, Worcester sauce and some stock. Delicious!

Duck a l'orange is a favourite classic here, I like to serve it with a salad of bitter leaves such as watercress endive sorrel and rocket, and some herby greek style roast potatoes.

Lancashire hotpot. I make it a bit posher these days with neck of lamb, sliced potatoes and rosemary. It's so simple and delicious.
I am lucky enough to live near a Waterfields bakery and I enjoy their egg custards. I was happy to see Marcus take some tips on how to make an egg custard when he won the Great British Menu. The pie and confectionary shops of the North West produce food which are truly excellent! Anyway, I digress.

As my username suggests, it's got to be mince and potatoes! I used to love getting home to find my Mum doing this for dinner. Mince with carrots and onions in a gravy, with boiled potatoes cooked in their skins and then covered in butter. Delicious!
