Following on from his Sunday Times bestseller Marcus at Home, Marcus Wareing is back - with a must-have new classic for your kitchen shelves.

Over the years, Marcus has developed and refined recipe after recipe. Whether it’s a quick meal after a hectic day, a recipe to bring your family together or a feast to impress your friends, Marcus brings excellence to every dish that he makes.

In New Classics, Marcus takes the best of time-honoured recipes and puts his own spin on them. What’s more, he creates new recipes that will become much-loved classics in their own right. Here is a book to pore over, to bring inspiration and excitement back into your cooking, and to use again and again.

Marcus’ new book features his own take on classic dishes, as well as dishes he thinks deserve to be classics of the future. For a chance to win a copy plus a £100 restaurant voucher, we want to know: what are your all-time favourite classic recipes - or the ones that you think deserve to be classics?

Eggs Florentine and minestrone soup are classic favourites of mine. But I do think pineapple, cheese and pickled onion on cocktail sticks are so underrated!

A good fruit cake. I am really looking forward to Christmas cake.

Beef casserole with dumplings is another favourite, as is cottage pie.

Or there’s the lemon torte recipe I got from my MIL - biscuit base (I use ginger biscuits), and the top made of a large tin of condensed milk whipped together with the same amount of double cream, and lime or melon juice and zest to taste - pour onto the base and chill - they citrus makes the topping set - it is delicious, and so easy and never goes wrong.

Hunters chicken/chicken chasseur; the food of my childhood.

But actually the question of what classic food means in 2017 in the UK is interesting!

I think a vegetable lasagne should be considered a classic. It's cheap, healthy, full of flavour and perfect for the whole family!

I'm a massive pastry fan, so things like Beef Wellington and salmon en croute would definitely be on my classics list! :)

Treacle Sponge

INGREDIENTS
250g golden syrup, zest 1 lemon, plus juice ½ lemon, 5 tbsp breadcrumb, 200g pack butter softened, 200g golden caster sugar
3 medium eggs, 200g self-raising flour, 5 tbsp milk

METHOD
Heat oven to 180C/160C fan/gas 4. Mix the syrup, lemon zest, juice and breadcrumbs and spread over the base of a 1.5 litre baking dish.
Beat the butter and sugar until pale and fluffy, then beat in the eggs, one by one. Stir in the flour and milk and dollop over the syrup. Bake for 35-40 mins until golden and risen, and a skewer poked into the sponge comes out clean-ish. Eat with lots of custard, cream or ice cream and extra dribbles of syrup.

Veggie shepherds (well, technically cottage pie bottom, shepherds pie top) pie has been passed down through our family, started off with meat and swapped to veggie mince as its been passed down, but everything else is the same. It includes baked beans, pads it out a bit to make it cheaper, the beans work well with the mince and the bit of sauce mixed with the gravy makes it really nice without actually being able to tell a tin of baked beans in sauce has been added not just haricot beans.

It started when my grandma had unexpected visitors and had to make their meal stretch further, the family all commented on how it was even better than normal so my grandma did that in future and was pleased that it made the meal cheaper (or stretched to more meals meaning the kids had it the next day too)

My husband's beef brisket, slow cooked and served with creamy, garlicky dauphinoise potatoes, fine beans and loads of really strong horseradish sauce.

It is simply sublime, and the perfect Sunday dinner as it can, largely, be left. He preps it in the morning, sets the timer and goes off cycling for hours.

We sometimes do it for friends and they always ask for the recipe.
