Nice one mumbojumbo.. just deciding what to eat for dinner now. I made the couscous cake yesterday and I find them so filling (that's not eating it all either!) I ate the rest this afternoon and not hungry.. yet!

Fireflyfairy2 · 29/01/2007 21:06

Or for the couscous cake:

4oz couscous
250ml boiling water
juice of 1 lemon
lemon cest
2 tbsp lemon curd
3 eggs

Soak couscous in the water for 20mins

Add rest of ingredients and mix well

Put in a microwave dish or baking tray

Cook in a microwave for 10mins or oven for 20mins at 180c.. recommend oven version for cooking.

I rarely bother with the juice of lemon and cest if I don't have a lemon about I just up the lemon curd

Martha200 · 29/01/2007 22:05

The version I give is 2.5 for the cake on green or 8 on original (so obvviously one for the green

Martha200 · 29/01/2007 22:06

Sorry Christie.. just spotted switch mincemeat for lemon curd comment sorry!

Class tonight - I maintained; not bad considering all the rubbish I've eaten this week. Going to try to be REALLY focussed this week. Picked up a load of recipes at class, so will let you all know if I've found anything really good amongst them. One of the girls at class was talking about the creamed rice pudding you mentioned Firefly. Said she was sick of mullerlites for pudding and it made a great alternative - I had a "mumsnet flashback" as she explained how to make it! Mumbojumbo, you sound way too svelte to need this thread! ..... Unless you're 2ft tall, of course!

Fireflyfairy2 · 30/01/2007 09:54

LM

I think I might make that coucocus cake @ the weekend. I looked for those sausages LM in Tesco, but they didn't have any Might try & do an order online & see if they stock them. Can you tell me who makes them or they Tesco own brand?

Well done for maintaining, that's really good

Mumbojumbo · 30/01/2007 09:59

Awww, thanks Loobysmum! I've lost 1lb off 3st which was a bit of a slog but I feel soooo much better now I've done it. Love the food too~!

Fireflyfairy2 · 30/01/2007 10:02

Well Done MJ

Now...if I can just grab some of that determination... I am back @ Uni now so should be back to my old routine... I was in the shop yesterday @ break time & picked up a cup of coffee... & a bar of fudge I immediately set the fudge back down again & felt very pleased with myself. I had a kiwi instead

I have counted that I need to lose 2 stone by July. So if I lose 1.5lb every week I should be well on track Now all I need is willpower

mammaemma · 30/01/2007 11:14

Hi ladies,

Tuesday weigh in !!: This is my first week, started at 11 stones 2 lbs and this morning I am 10 stone 13.5 so a loss of 2.5 lbs which I am really happy about especially as it now means i can see the 10 stone number, makes such a difference. Good luck other tues weighers !!

Last night for tea I baked two jacket potatos, scooped out the flesh, mixed with very low fat cottage cheese, 1 slice of bacon fried in fry light, some mushrooms fried in fry light, and spring onions. Then mixed it all together, popped back into skins and grilled with a little cheddar on the top. Low sins or even no sins if cheddar taken as an A and bacon as a B. Had them with salad, very filling and very tasty !!

BENDYB · 30/01/2007 11:44

well done mammaemma, i only lost a pound this wk but didn't properly stick 2 it over wkend so only got myself 2 blame! i need some new ideas! startin 2 get bored of it again now!!!

BENDYB · 30/01/2007 11:47

good idea on the jacket pots, think i'll try that, & the cous cous cake! Still gotta try the smash pizza 2, its hard findin time with ds tho, 2 actually make things! need 2 start having quick things, like pasta n sauce stuff like that

katylou25 · 30/01/2007 12:42

Hi everyone, just wanted to let you know I made the cookies out of this months magazine yesterday and they're suprisingly nice!

am making pasta for lunch with mushrooms and sweetcorn and melting laughing cow into it to make a sauce - what do you guys have with pasta???? Find it quite difficult as i loathe tinned toms which is the obv choice are there and ready made sauces that are low sios???

Tea is going to be griddled chicken (HE) with veg fried eggy rice - yum yum and its ds1's fave so he'll be happy!

Am weighing tomorrow night am hoping for 2lb to make my half stone in 3 weeks so fingers crossed. Had an indian the other night tho and dh bought onion bhajis, poppodums et so of course i just HAD to eat them!

mammaemma · 30/01/2007 13:24

Spaghetti Carbonara is my fave, heres the recipe..
1 small onion
1 clove garlic, crushed
2 tbsp vegetable stock
2oz/57g bacon
2 tbsp very low fat natural fromage frais
2 eggs
1 level tbsp grated parmesan cheese
2 tbsp chopped fresh flat leaf parsley
Salt and pepper, to taste

cook onion and garlic in the stock for 4-5 mins add cut up bacon til cooked.
In a small bowl whisk together the fromage frais, eggs, parmesan cheese, parsley and seasoning. Miz drained spaghetti, egg mixture and onion garlic etc in pan over low heat to slowly cook eggs through and yum yum !!!
Its almost free on a green if you take bacon as HE then you only have to count parmesan which i think is 1 sin?

Also I love boursin light stirred through pasta on its own. You used to be able to have that has a HE don't konw if you still can?

Joby1970 · 30/01/2007 13:56

Hiya

Just wanted to say tried the SMASH PIZZA at the weekend - it was FAB . If you haven't tried it then do so straight away. I had it with a glass of wine (syn counted of course) & felt like I was being v naughty! I'm going to make it with SW chips next time!!

tkband3 · 30/01/2007 13:57

Getting weighed at meeting later so will check in after that. But here's my fave pasta dish:

Whilst pasta is cooking fry lean bacon in fry light (HE). Then when pasta is ready stir in big handfuls of spinach (yum and speed food) till wilted, chuck in the bacon, squeeze in juice of half a lemon and parmesan (either HE or a few syns). Sometimes I toast some pine nuts to add as well. V. yummy and even better - OH cooks it whilst I'm at SW on a tuesday so not only do I get to go out, but I get dinner cooked as well .

Am definitely going to try the baked potatoes - have been getting a bit bored with the SW tuna and the coucous cake sounds weird, but worth a try!

Mandymoo · 30/01/2007 15:13

had my first weigh in this morning and lost a pound!

Didnt stick to diet as didnt have any SW type food in so am quite happy with that.

So now weigh 11 stone 1!!!

Aim for next week is 2 lbs loss to get below 11 stone.

Started properly yesterday so will be on here looking for ideas and support as i have zero willpower!

katylou25 · 30/01/2007 16:38

Thanks for those pasta recipes will be trying them out

Martha200 · 30/01/2007 17:15

5 lbs down, which more than makes up for the gain last week . Used all my syns, no exercise which I normally do.. weird how somethings work!

lurcherlass · 30/01/2007 17:22

What's Splenda?

Fireflyfairy2 · 30/01/2007 17:49

Splenda is a low fat sugar.. it's a bit like candarel except it can be used for cooking

Can candarel be used in the cous cous cake?

Mumbojumbo · 30/01/2007 18:28

OMG, will someone take this bl**dy birthday cake away from me......it's driving me potty! DH is away (not that he'd be tempted), and DS1 and DS2 are working their way through small quantities of it. However, I've just eaten rather too much of it. God it was really sweet and sickly (but rather good ). Good job I got weighed last night, so I've got the rest of the week to make amends.

Not good!

honey28 · 30/01/2007 18:40

I can second the Smash pizza being delish - just had it for tea and OMG it was like proper fat food!! Really enjoyed it and really easy to make too.

WornOutMumOfThree · 30/01/2007 20:55

Hi Ladies

I'm new here and have been doing SW since Septmeber on my own (not going to weigh ins) and have lost 2.5 stone but am stuck now at 14 stone with no loss since Xmas. Does anyone have any suggestions of how I can kick start my weight loss again? I'm getting really fed up now.

Thanks
