Hello fellow strugglers, I'm really struggling too, today. Sad
I still have a massive headache, I wish I had fruit instead of dinner; I wish i did't had cheese to the courgette omlette at lunch and had a piece of fruit instead.[grr] Lunch and Dinner (chicken and green been in home made thai green-no fat, no coconut) were nice enough but not enough carbs for me.
It's almost 3 weeks since I had a piece of chocolate and now I want a full bar (200g), I have even checked how many calories the raw chocolate nibs that are in the cupboard (too many!). Victrix, can you share your 0 cal gluten free dark chocolate banana loaf recipe, please, pretty please with a cherry on top? Grin

Not giving up, just having a monumental fall of the wagon day (did I mention the Mojito that washed it all down?)

It's DD's 10th birthday at the weekend so I'm up to my eyes in prep for that, first full week back at work and manic for various reasons, and DD's school is in the theirs of being taken over by an academy.

They have a new leadership team who seem hell bent on making lots of changes as quickly as possible without keeping the parents in the loop, and DD, who idolized the old headteacher, is finding it all a bit of a struggle and is having some very moody & tearful phases, as was I today.

Luckily I work with a lovely bunch of people and if any one of us has a problem there is always plenty of tea and sympathy on hand but that doesn't give me more hours in the day which is what I really need between now and Monday!

I don't have a calorie free choc cake recipe, but having made DD's birthday cake last night I can certainly point you in the direction of one that is so sweet & rich & gooey a couple of mouthfuls will put you off for life Confused !

I'm sure DD and her friends will love it though.

0*Calorie Gluten Free Choc Chip Banana Loaf

Ingredients:

250g self-raising GF flour
250g golden caster sugar
125g butter/margarine- I use stork.
3-4 ripe bananas
2 large eggs
1 tablespoon-ish ground cinnamon
1 teaspoon GF baking powder
200g dark chocolate chips
1 teaspoon vanilla essence

Method:

  1. Pre-heat the oven to 180°C, and grease and line the loaf tin (900g tin) with baking paper.
  2. Cream the butter and sugar together, beat in the eggs one at a time and then add the vanilla essence.
  3. Sift the flour and baking powder into the mixture, add the cinnamon and mix until combined.
  4. Mash the bananas and add them to the mixture- I use an electric mixer to get rid of any lumps. Stir in the chocolate chips.
  5. Pour the mixture into the loaf tin and bake in the oven for at least an hour. I usually end up poking it with a skewer after about an hour, then testing every ten minutes. Think average time is about an hour and a half.

*Calorie amount calculated by hormonal woman prone to delusion and wishful thinking and may not be accurate, but the cake has fruit in it and folk are always going on about the antioxidants in dark chocolate so hey

Oh yeah, and if you are a lucky proper bread eating BASTARD aren't gluten free use plain flour and 2 teaspoons of baking powder.

900g tin? Confused My tins must be are really old, when I bought them metric had not be introduced. Grin The label on the tins told you how many inches in diameter or how many 'eggs' a sponge would need in that tin!

Just bought ds a couple of GF baking books but we haven't got round to try any bread recipes yet, because, as any cook would, I would need to test, test again and then, just to be sure...

Just measured my loaf tin- it's about 8.5in x 5in if that helps Grin

I've only done bread once but it was a gf packet bread mix and it was awful. It's on my list to try out though.

I find most normal recipes that use plain flour you can pretty much just swap for GF self raising and a bit less baking powder.

Got it! A 'loaf' tin for a banana loaf! Grin I have never baked a loaf before, thought they were just for eating. I might still have a silicone one somewhere, never used of course, which I bought to experiment with gf bread! Oh, how exciting! I'm going to bake my first loaf next week, when we are allowed up two slices of 'bread' a day and it will have 0 cals too by then! Grin

Duncan is slipping a bit, I'm having toast for breakfast instead of grapefruit juice. I'll follow rest of the day though.

Ohh, a python how exciting! I love snakes! Can you post a pic when s/he arrives? We have applied for a puppy now, its a german pointer x english springer Hmm DH is head over heels for it! I guess I'll be getting even more exercise than I thought...

Tummy is growling a lot today, I think it's because I had sprouts for lunch and the cabbage and broccoli for dinner. Brassica overload!

My annoyance is that it's the same half stone flighty. I started these threads at 12st 6lb, got down to 11st 13, back up to 12st 5lb (largely due to pre-run eating) and am working my way back down.

I love my new gym and am very motivated as DS loves the crèche and that's my only space in the week as he's abandoned naps. I just wish exercise made me lose weight.

Oh I know that one waiting, I'm currently having to lose the 2.5 stone I lost over a year ago.

Unless I get up at stupid o'clock I have no time for exercise as my husband works completely unstructured and un-patterned shifts and there is no-one for childcare.

Should've weighed this morning but didn't dare after last night.

Glass of smoothie for breakfast and a bowl of iceberg lettuce and prawns in Marie rose sauce for lunch.

Don't really have time to think about eating today which is just as well.

Off for more party prep!
