Wow so many lasagne ideas, thank you all! I was wracking my brains trying to think what veg to put in the sauce bit if I was using courgettes as the "pasta" (don't like aubergines and am aware of the sadly carby nature of onions, toms and peppers) but whoever mentioned broccoli has inspired me. That can go right in there, with some leeks and peppers in a bit of passata. Maybe a layer of spinach too as that is very delicious with a creamy and tomatoey sauce. And a pile of cheese. All my meals have a pile of cheese inserted somewhere.
Food of the gods.

You must be chuffed, you sound like you are loving this so much as well which is fab to read. The enthusiasm leaps out. It's weird isn't it how not quite right carby things taste now. I taste tested DD's spaghetti tonight to check it was cooked, and had to try about 3 bits as I couldn't work out the texture anymore.

I had my spaghetti (courgette) and meatballs for dinner and it was fab. Pork mince with fennel seeds, garlic and hot smoked paprika for the meatballs and a spicy (and stingy!) tomato sauce, lots of cheese and some salad. Officially stuffed.
Ooh and we tried cabbage carbonara for lunch, I think it is BIWI's idea on the recipe thread? Used this bbc recipe but with finely sliced and steamed white cabbage and it was really good, I reccomend it. We added a big pile of mushrooms, as lets face it, creamy garlicy, buttery, parmesany sauce is just crying out for them. DD had already had some salad, cheese and an egg sarnie, but she inhaled the creamy cabbage off of our plates. This woe is fab for getting her into veg.
