Week 7 - New Year Low Carb Bootcamp - Where We Get Tough!

Morning campers

Here is the Spreadsheet of Fabulousness

This week sees the start of Ubercamp. This is entirely optional, by the way!

The idea is that we have three very strict days, keeping our carbs under 20g each day and consuming no dairy.

If you want to take part, I have put together three days' worth of meals as a guide - one which includes eggs and one which is an egg-free plan for those of you who don't like eggs. I'll also do one today which is purely fish-based.

As well as the meal plans, I've also written shopping lists and some recipes, where necessary, and the lovely Willie has put these on the spreadsheet - just look at the tabs at the bottom.

Bacon, egg and mushrooms for breakfast.

I have just made the most amazing swede, celeriac and cauliflower soup ever! Really creamy and filling. Added Parmesan.

Loving this WOE.Grin

ooh, anyone getting a bit bored of eggs for breakfast, I have livened my scrambled eggs up this morning with a shaking of dried thyme and a sprinkling of cheddar. Reminded me a bit of cheese scones.

Tomorrow I shall add a finely chopped cherry tomato, some dried basil and a sprinkling of parmesan.

You never know on Weds I might try something wild like frying instead of scrambling...




My casserole is sat in the slow cooker looking a bit watering and awaiting your help ladies...

Spilt - do you like avocados? I have been having avocado and macadamia nuts for breakfast :) (though not sure whether you are bootcamp or bootcamp lite so you might not be 'allowed' the nuts, I'm vegetarian, so it's OK), I was having avocado and cheese but I'm trying to cut the dairy down a bit.

I am just foraying into avocados myHead. I have been mashing them up and stirring them round my salads (shredded spinach, fine sliced radishes, grated broccoli stalk, cucumber) and with some red wine vinegar and olive oil it has been delicious.
It's also really nice with smoked trout or salmon but I guess that doesn't help you too much! I will try it with cheese (but prob for lunch not brekkie!), sounds nice, avocado needs salt I think so cheese is probably good like the fish or bacon would be.

Dont' see why you couldn't use cauli rice in jambalaya - I had a pretend takeaway style egg fried cauli rice with mushrooms, prawns and sesame oil last week and it was lovely.

Re the stew - tip the meat/veg into a colander over a large bowl, then put the meat/veg back in the casserole dish.

Tip the juices into a saucepan and boil until reduced sufficiently, then back into the casserole.

or

Take some of the veg out (don't know what you've used so don't know how successful this will be!) and mash it into a pulp, then stir back into the casserole.

Didn't weigh this am bit will try tomorrow. Had a bad weekend food wise do need über camp to sort me out. Had gallons of water already today and am weeing like a racehorse as a result.

I will try the reducing BIWI thanks. Whilst the swede cubes might mash up fine, I fear the celery could be a bit rank!

Gosh.

Half a day into Boot-Up-The-Arse and I'm feeling like I have carb flu. That must mean either that I had strayed waaaaay off into the long grass in the last few weeks.. Blush or I am getting actually poorly. Which would be quite shit.

Well done losers, STSers and generally-feeling-betterers.

AuntieMaggie I use cauli rice in Jambalaya and mix it in half way through cooking (instead of at the beginning) so it doesn't go too soggy but still absorbs the flavours. Thank you for reminding me of it actually, it's delish! Cauli rice is cracking in kedgeree too.

Have you had any caffeine today, Ewan? I never suffered from carb flu, but I felt dreadful when I gave up coffee.

Hi All, well part way through day 1 of Ubercamp and I have suddenly realised what a carb creep has been going on. I am craving coffeeSad can I have some with almond milk??

Breakfast and lunch were scrummy and I have drank 5 pints of water so far and been to the gym for a 2 hour work out

Well - it is dairy-free, but it does have carbs in it, because it contains sugar. If you can avoid it, I would do.

well I never drink caffiene anymore but had 2 full strength black coffees at a friend's yesterday and have a headache that I cannot shift today. It's the only thing I think it can be. Have had gallons of water today. I can't wear my hair up it's hurting! Sad Weird.

I'm back home, where I don't have any scales, so have put myself o the spreadsheet as STS this week - can't weigh until I'm back in the UK on April 23rd (though it looks like I may be going back earlier as Dad's not looking after himself without me).

I shan't be Ubercamping, 'cos I've done the shopping for this week and don't have all the ingredients. I do have quite a lot of fish though (salmon, tuna steaks, scallops, mixed fish) so I'll be eating that anyway this week. Tonight it's aubergine Parmigiana, which I love, so am looking forward to that!

After my major downer last week, I tentatively got on the scales and am down a pound. Thank you again for all the pep talks and encouragement.

I was so focused on the fact that it's slipped up rather than remembering to get back onto the woe that it really helped to have your support.

So, I have lost 10lbs in total. My tanita scales still have me as having 41% body fat which is a bit shocking but it's down from about 44% so an improvement.

I will try to follow the menus for übercamp, thanks BIWI Thanks I really don't like salmon so will swap that from some other meat.

I'm still struggling with the lack of oomph to eat, but I will try this week and I have also been just off water Hmm so will try and force it down this week.

Thehumancatapult, your weightless in just 7 months is amazing. I have 3 to 3.5 stones to lose so hearing stories like yours is definitely Inspirational!

Hope everyone who has been under the weather is feeling better and that any poorly little ones are on the mend.

Feeling sorry for myself having put on a lb according to the scales this morning. Obviously it was the curry on Friday and 2 glasses of wine over the weekend that did it Sad. I also realised that I am not drinking nearly enough water and am trying to remedy that today.

So far
B - none - not enough time this mornig
L Roast chicken and mayo with lots of green leaf salad and half an avacado +4 cherry tomatoes.

Am off to peruse the fridge to see what I can eat for dinner.

I seem to be down 1.5lbs this week. I'll take that.

The sore throat seems to be gone but my body is tired. I guess from my immune system having to fight for the last week.
