Old lo-carb thread was 'too big' and wouldn't let me post this. It's for a almond meal pancake - I find one is really filling (I have it with total yoghurt and blueberries) and leave the mix in the fridge to have another next day.

Ingredients:
?1 cup almond flour
?2 eggs
?1/4 cup water (for puffier pancakes, you can use sparkling water)
?2 T oil
?1/4 teaspoon salt
?1 T sweetener
Preparation:
Mix ingredients together and cook as you would other pancakes. I like to use a nonstick pan with a little oil. The only real difference is that they won't "bubble" on top the same way as regular pancakes. Flip them when the underside is brown.

Yield: Six 4-inch pancakes

Nutritional Information: Each pancake has 1 gram effective carbohydrate, plus 2 grams of fiber, 6 grams of protein, and 155 calories.

I take berroca for my vitamins.

I actually don't feel hungry and I am sleeping well but having some vivid dreams lately.

I do have chicken or meat if I'm bothered to cook it, some days.

sorry, not much food advice in that!

goats cheese salad for lunch; managed to resist the bread roll they surreptiously put in the bag. I need to bin it before I succumb to a 4.30 low blood sugar.. oh, too late...

Am binning the rest right now.

Have headache so taken a couple more nurofen. This morning's perkiness has dissipated...

Hope you're all in better form than me

Glad this thread popped up on my most active as I've dropped off it ... Failure to plan is planning to fail, and I have failed to plan food this week and ended up eating off plan yesterday for the first time since New Year (I ate 2 carb meals rather than one - for newbies, I am a Carbohydrate Addicts diet follower, so I do eat one meal with carbs a day). Today I was faced with starvation hunger levels at 3pm, no available food, and immediate work deadlines, so I have eaten sweet rubbish to get through.

I am not technically off plan though, if I count this as my 'reward meal' and stick to low carb this evening I will be back on track. I haven't lost weight for a week and that's partly behind it, and have also been re-organising house in the evenings (due to energy burst from eating this way, ironically), and have been prioritising that over food.

But I can't slip like this for long. For my life to work, food needs to take priority. Otherwise I get depressed and everything goes down the pan.

So my goal for the next 8 hours till bedtime is not to eat any more carbs. I may check in again .....

Trying to avoid hoovering the living room, so just checking in for a quick hello.

Aluvss - just tuna and eggs?? Low carb it may be, but I think you need more variety. And vegetables!!

Orm - nice recipe! I do something almost identical with fresh salmon fillets (the dcs love salmon). Goes well with braised cabbage (plus noodles for the dcs).

Systemsaddict - Keep focussed, put your sugary transgressions behind you and forget it! Go and eat a lump of cheese!

Thanks Sal, and CV you are right, I'm eating cheese as soon as I get home. Feel crap now, proper post-sugar rush, my mouth is tingling and I am blurry and feeling the pull of the couch Sad

I am really struggling to eat veg atm. We're supposed to stick mainly to green leafy veg and it all tastes too strong. Especially without gravy! I am eating lots of salad but I know that's not as good nutritionally. Cabbage in particular tastes vile and normally I love it.

Those pesky crisps.....

I've just eaten some chunks of salami to take my mind off the post-school hot cross buns the dcs were scoffing. Not quite the same, but at least the urge to stuff carbs into my gob has temporarily gone away.

But I did the hoovering!

garlic spinach? I chop it, wilt it quickly in a large lidded pan then add at least 2-3 cloves garlic and a very large wodge of butter and plenty of black pepper. Mix around.

broccoli is my standby

Red cabbage is nice for a change, especially with sausages.

courgettes also good - you can make feta fritters with them.

Fennel? Kale, which is a bit less cabbaghe-y?

Oh, roasted leeks are lovely. Just chop them at an angle into 2 inch long logs. Douse with olive oil, salt and pepper and roast until just bistering in a hot oven.

TBH I still have onion and peppers and tomatoes a far bit though I try not to have tons of them.

I'd find it really hard to manage without onions and tomatoes, so I don't even try! I think you have to eat an awful lot of them to make much difference though.

Onions are quite high in sugar actually. I tend to use spring onions or leeks instead.

Hi All,

just done a friday night roast so have tons of meat left over ... mmmmmmmmm.

Om - I do something like that with chicken breasts cut into strips - I add olive oil, salt, pepper, and jerk spices - absolutely lovely shoved in a hot pan and cooked through. Serve mine with a spinach salad (raw spinach chopped up and dressed with olive oil and balsamic vinegar.

Free - I have never roasted leeks but yours sounded so lovely I am going to this weekend.

Forgot to weigh this morning but will try to remember tomorrow. Trouble is I have to get up at 0515 to take my DS to his swimming club training (it's an unholy time and I only survive it by drinking mega coffee) Grin

Re sleep problems - I was reading the other day that there is just too much light pollution and many of us sleep with our curtains open/ajar. Apparently if you can make your bedroom pitch black at night (wear a sleep mark if necessary) you can vastly improve your sleep and therefore your energy levels etc the next day.

Sleep is important in managing the stress hormone - cortisol. Too much stress and therefore too much cortisol has been shown to cause weight gain!!!!!!!!

Fight or flight style releases of adrenaline are necessary to our survival (of great importance when we were hunter-gatherers) and is still useful today. However, we now no longer hunt our food and lead extremely stressful lives which means our stress response has no real means to being used and this cortisol causes problems with our ability to lose weight/stop gaining!!

Almost back to last Saturday's weight. Which is not bad going. Aim is to stay on course tonight and tomorrow.

Dinner last night was pan fried duck breast with a vietnamese/thai style salad. Which was lovely.

Salad was:

handful of rocket
handful of chinese lettuce, very finely sliced into long skinny strips
hand a red pepper again very finely sliced
quarter of a red onion, finely sliced
half a pack of bean shoots - didn't check the carbs of these but can't be too bad
about 1/8 of a cucumber finely sliced with a peeler
about 1/4 carrot finely sliced with a peeler
fresh coriander, roughly chopped

Mix it all up.

Dressing was sesame oil, garlic, chilli, ginger, fish sauce, lime juice, salt and a tiny bit of palm sugar. add more lime juice or oil to taste. pour over salad then slice the duck into thin strips and eat fast.

although there is carrot and peppers and stuff in this, you really need very little of them. It's mostly lettuce and duck and a lovely fresh dressing
