Old lo-carb thread was 'too big' and wouldn't let me post this. It's for a almond meal pancake - I find one is really filling (I have it with total yoghurt and blueberries) and leave the mix in the fridge to have another next day.

Ingredients:
?1 cup almond flour
?2 eggs
?1/4 cup water (for puffier pancakes, you can use sparkling water)
?2 T oil
?1/4 teaspoon salt
?1 T sweetener
Preparation:
Mix ingredients together and cook as you would other pancakes. I like to use a nonstick pan with a little oil. The only real difference is that they won't "bubble" on top the same way as regular pancakes. Flip them when the underside is brown.

Yield: Six 4-inch pancakes

Nutritional Information: Each pancake has 1 gram effective carbohydrate, plus 2 grams of fiber, 6 grams of protein, and 155 calories.

Oh no NQN - that sucks.

Sounds like you need to ease yourself back into it. How about lots of soup? TBH I think that your body really does need carbs after illness. I just can't imagine going back to eating meat and cheese after being ill.

Can I join you? I need to lose a stone and a half before May.
I have lo carbed for over a year and come to a halt!!
I eat Atkins bar and coffee for breakfast, salad leaves and sandwich filler for lunch and bolognese and veg or chilli and veg or fajita chicken and veg for tea.
Haven't eaten a potato or rice or pasta for over a year but my weight has increased by a whole stone since November :( boo!!!
My weakness is biscuits and cake and mini magnums I need a treat every day!

Hello Countess - I'm new here myself but doing well with the no/lo-carb thing.

NQN - coming out the other side of a bug/virus can be horrible. Were you on anti-bio's? They can cause massive disruptions in your body and it can take a while to get back to normal.

FBB - Part of the problem is that I have my appetite back, but while I want to have good LC stuff, 90% of goog LC things I just can't face yet.

We had fish for dinner last night and I sat there poking the fish in disgust like a toddler (actually, my toddler ended up eating it.)

I'm thinking I might try some kind of stew this weekend. They're harmless enough.

Countess - It sounds like you need to find some new recipes and up the variety. Boredom leads to biscuits Grin There are quite a few rally tasty recipes in this and the previous thread (squid & kale stir fry: Yum. Celeriac gratin: Yum. Almond pancakes: Yum Yum.)

The treat I usually have everyday to keep me sane is sugar free jelly and cream.

Oops, fell into a chocolate brownie at lunchtime. It was fantastic and I really really enjoyed it so am not going to get too upset about it. Also had chicken and salad.

I have bought a nice big thick rib eye steak for dinner, will have with watercress and bearnaise sauce (HM if I can manage it). DH had a 1st successful interview today which is great so time to celebrate a little.

countess I am on the hunt for low carb cake recipes as its that time of the month. Do you want me to post any recipes?

I have'nt weighed this week as I don't think it will show a loss. Been for two long walks yesterday and today and had lots of water so fingers crossed for next week.

Hi all, just spent an enjoyable hour putting darts in all my favourite skirts and trousers that were TOO BIG to wear (raahhhh!).

For dinner, I'm going to try the moussaka recipe posted earlier in the thread (FBB, if I remember correctly). Will report back.....

Hello Countess! Good to see you here. I'm alright, except I'm not managing to get on top of things/lose any weight - I got off to a good start but going on a desserts course last week was a bit of a hindrance (even if it was lovely!)

I haven't weighed this week and will not be doing so till next week. Food choices have been pretty good this week, so I'm hoping to be properly on track again by next week.

chocolate fudge cake is in the slow cooker. I have made it low carbish it smells amazing.
I have adapted a non-diet favourite recipe as follows:

1 mug soya flour
1/4 mug ground almonds
2 tsp baking powder
3 tbsp cocoa powder (used bournville)
small amount of splenda (didnt have powder so crushed some tabs)
1tsp vanilla extract
3tbsp olive oil
1/2 mug lacto free milk

mix dry ingredients then add wet ones & mix well. pour into greased slow cooker.

then in a seperate bowl I mixed a couple of tsp of cocoa and some more sweetner with hot water, pour on top of cake mixture in slow cooker.(this should be the fudge sauce & probably better with sugar)

I dont know the carb amount per serving whole cake and I don't care Grin

my cravings were bad yesterday and I went to bed with a migrain despite drinking loads, should of guessed it was my period. Today my carb cravings are awful - any tips for surving this while low carbing or failling that any better cake recipes? Grin

Right i never thought this would work but vodka and fizzy water!!!!! It works

Lrge shot of vodka - we're talking 50 mls here, at least three wedges of lime, squeezed anf then put in to the glass. Then about the same amount of fizzy water. Swizz up, taste, add more fizz to taste.

D'ya know - it's just as nice as v &t. Genius!!

FBB - if it was your moussaka recipe - ta very much!! It went down very well (apart from the dcs picking off the aubergine, of course), and there's enough left for lunch at work on Monday.

I bought some soda water specifically to try out the vodka/lime/fizzy water thing (actually, I'm more of a gin girl), but found the spirits cupboard was a bit bare, so awaiting some duty free supplies next week.

Glad you enjoyed the pancakes, Sal, I didn't put enough sweetner in when I made them, so they tasted like nutty omelettes - barf.

Glad u like it; the eggy bit poofed up a bit much for dh whonis not an egg fan. But lovely really.

I am well pissed on vodka and fizz. Brill. A small drop of of lime cordial helps for no appreciable calories.

Am just about to make the pancakes and wondered: does the "T" in the recipe refer to tablespoon or teaspoon??

Also, for all you vodka fans - there is a fab drink called the Grey Goose Fizz: 50ml Grey Goose vodka (any will do really), 15ml lime juice, 15ml elderflower cordial and top up with soda ... mmmmmmmmmmm. Gorgeous.

My friend was drinking those when we went out the other day. I can't remember whether it was at the Long Bar in the Sanderson, or the Dean St. Townhouse, as we did a damn fine job of working our way through the cocktail menus at both. Blush

In fact, I can't remember anything much about the entire lunch due to trying to low-carb yet simultaneously drink myself silly (which culminated in my getting home at 1am. From lunch. Hmm) but I do remember that all three of us cried at some point, and we all loved one another vair much by the end of it. Confused
