Old lo-carb thread was 'too big' and wouldn't let me post this. It's for a almond meal pancake - I find one is really filling (I have it with total yoghurt and blueberries) and leave the mix in the fridge to have another next day.

Ingredients:
?1 cup almond flour
?2 eggs
?1/4 cup water (for puffier pancakes, you can use sparkling water)
?2 T oil
?1/4 teaspoon salt
?1 T sweetener
Preparation:
Mix ingredients together and cook as you would other pancakes. I like to use a nonstick pan with a little oil. The only real difference is that they won't "bubble" on top the same way as regular pancakes. Flip them when the underside is brown.

Yield: Six 4-inch pancakes

Nutritional Information: Each pancake has 1 gram effective carbohydrate, plus 2 grams of fiber, 6 grams of protein, and 155 calories.

That is my weekly total. Got another stone and a halfish to get back to my comfortable weight but would like to get lower - I just know my limitations!

Yes I was worried about that sal! Everytime I fell off the wagon before I found it very hard to get the weight loss moving again afterwards. But this time it's not been a problem - I guess that is because I hadn't just fallen off the wagon but jumped off it and got on a speeding train in the other direction as far as possible!

well i was super good this weekend for the first time since xmas.

i took friday off , but came back on saturday.

i have more or less been the same daily weight each day - each week since xmas iyswim

but this morning i am 2 lbs down on last mondays starting weight.

i am so motivated and proper chuffed.

Well the prunes seem to have had the desired effect - pooing like a mad'un here.

Also back on the water good and proper - had loads this morning.

Can't decide what to have for lunch so off to investigate the local shops. I feel the need for something different. Boredom is my personal downfall.

I am going to have to try these celeriac chips - Custy - how many celeriacs are you going through a day!?

P.S. - custy ... have just put two celeriac's on my shopping list. Will these be enough????? Grin.

Really though - I have never eaten celeriac - is it close to something in taste?

Plain natural yoghurt most days. I eat a small pot of yeo valley full fat you which is about 5-6 carbs. Sometimes with berries or a couple of prunes if my digestive system is feeling sluggish.

At the weekends, I have something more interesting - so smoked salmon and scrambled eggs, bacon and fried egg or a sausage. There is an interesting recipe for almond pancakes at the top of the thread which I might try sometime soon.

TBH I'm barely awake until 9.30 so picking up a yog and running is about all I can handle Mon-Fri.

Also I am probably following a higher carb approach than many people here. I eat a lot of veg and other than carrots and potatoes, don't limit any type. I even eat some real sugar now and then. My aim is probably to keep under 50g of carbs a day - which is less than a quarter of the recommended daily allowance. This gives me more room to eat interesting dairy and more veg. But it means that my weight loss is probably slower than others.

I try not to use this leeway to eat crisps, pasta, potatoes, bread etc however.

I don't eat potatoes at all but do eat carrots, although not in such large quantities as I used to.

I love some yogurt but have found dairy is not brilliant for me. Have you tried sheeps yogurt? Is it foul????

I will be trying the almond pancakes soon - just need to find some almond flour!!!

The upside to all this change in my diet though is that my clothes have become quite a lot looser in the last two weeks. I haven't weighed (too freaked to find out that I had turned into a heifer to do it) but am going by the fit of my clothes. Smile

almond flour is just ground almonds. Found in the baking aisle.

Not tried sheeps yog but worth a try. Bound to be more interesting than diet lo-fat-aspartame filled 'toffee' falvoured weightwatchers yoghurts which fill me with an impending sense of dooooooooommmmmmm.

Oooooooh, I hate the taste of aspartame. It's horrible. Anything "low-fat" tastes of it and it's god-awful.

Thought almond flour might be plain old ground almonds but you never know ...

Will be knocking up a batch of these asap to try so I have an alternative to the ones I make for DS and DH on pancake day.

Well, hello new week!!

Hi Timba, welcome to the party. Good luck with your pancakes; an alternative to ground almonds is ground flaxseed (linseed), especially if you are going for a savoury version. You also asked about the taste of celeriac - well, it's like a slightly celery-flavoured potato, I suppose. It's not as stodgy, though. And snacks - well, I try to keep a few tempting things handy in the fridge - current faves are cubes of salami and brie. Or I have a massive coffee and cream, which fills me up.

Meals so far today....

Breakfast - Asparagus dipped in mashed hard-boiled eggs and butter.

Lunch - Fresh mackerel, pan-fried, with salad.

Tea - Will have to be those celeriac chips, won't it? Have Sainsbury's reported an unseasonal surge in the sales of celeriac, do you think??!

Today - no time for breakfast. Lunch was a piece of smoked cod and a poached egg. Dinner - probably some leftover roast pork and a bit of veg/salad.

DD takes a dim view of any diet. She told me that I wasn't
'all that fat' the other day Grin. I was serving up the kids dinners and she asked me if I was going to eat something as I'd eaten nothing all day. I said I had eaten! I'd had breakfast. I heard her repeating this in shocked tones to her brother five mins later.

Oh dear. Book club tonight and pizza and chocolate prevailed. On the water now to help counteract some of it. I really need to work on resisting social pressure. I hate being a fussy eater or imposing on people. Need to work on it - will make some low carb goodies to bring with me next time as that seemed to be okay with all the girls.

Well, I liked the celeriac chips, unfortunately DH wasn't keen, and it was mainly for his benefit.

The parmesan chicken went down well with everyone, though. I mixed the parmesan with some ground almonds, salt and pepper, dipped chicken strips in egg, then into the parmesan mixture. I tried cooking them in the oven, but after about 30 minutes they still looked very pale, so I ended up shallow-frying just to give them some colour. Next time, I won't bother with the oven.

10 7 this morning so sloooowly going back in the right direction.

Plain yog for breakfast this morning. Will try and keep on track this week and hope last night's blow out hasn't done too much damage.

Might need to buy some protein snacks to keep me going as I am definitely feeling carb cravings this morning. No wonder I was always ravenous before going on this diet!

Yes Low-carb hangovers are baaaad! Had one on saturday morning from too many glasses of cava. Too many being 3! Normally that wouldn't touch the sides Grin

4oz off this morning! 4 poxy ounces.
