@RobinEllacotStrike I am a calorie counter usually as I have a very logical mind that thrives on facts, but if calorie counting causes you concern have you tried other methods first - I do these to keep my calories down as now I am in the swing of it I rarely log food on MFP anymore. I will use it again if I need to.
Same as you, I'm eating simple protein/veg/fruit meals as they will fill me up. I love mixed nuts to snack on too, but until I weighed out what the pack said was a portion my idea of a portion was way too big - the nuts are the only thing I weigh every time now as every time I stop weighing it gradually gets bigger and bigger! I have some carbs with meals, but prioritise eating protein and veg on my plate first and carbs are regularly left. I try to spread protein out through the day so I feel full all day.
I watch out for liquid/hidden calories - milk, drinks, smoothies, oils, spreads, dressings, sauces can all add up - I am eating much more food with limited sauces now - the air fryer has been great for meat with seasonings and roasted veg
Use smaller plates/bowls. Using the small plates we have is normal for me now. I got my portion sizes from weighing and calorie counting but you could maybe look up portion sizes on internet to get an idea if your portion sizes are good. Fill half the plate with a good mix of vegetables to keep it interesting.
If you are still eating bread how about small loaves where slices are a smaller portion.
Mindful eating - I try to eat most meals with no/few distractions, chew, stop when I feel full not when the plate is empty.
Avoid eating after 7/8pm - grazing in the evenings has been the habit hardest to break for me.
Walk more / Drink more water
Batch cook and freeze in "new me" sized portions. Especially soup!
Variable eating days - I still enjoy a chinese takeaway with dh and ds every week (1/2 portion rice and serve with a slotted spoon so I have less sauce and no chips!), but I know it is ok because I have consumed less on previous days when MJ suppression was high. I think it is good for our bodies to have days where it thinks the "famine" has ended - keeps it guessing.
Buy plain but better quality/less quantity healthy food that feels like a treat to enjoy - shop in M&S now and again for fresh food! Their veg and meat/fish are nice, just stay away from the pastry and rich sauces! We had some lovely sirloin steaks from butcher (dh had some of mine I couldn't finish) last week instead of a takeaway, pricey, but still cheaper than a takeaway and were much nicer!
