@SapatSea what??? If he wants to cook meat he can cook it! DH here cooks meat for him and DD once every week or two - if he does fish DS partakes as well otherwise he makes him a veggie burger or something

DH is obsessed with the Chez Jorge site - he’s made a few dishes from there now (the smashed cucumber last week was amazing!) and the freeze and defrost method for tofu is incredible - he’s going to do it next week and try fried “chicken” sandwiches

PartTimeDomesticGoddess · 09/02/2022 22:20

@KobaniDaughters that Korean tofu looks amazing. Will bookmark it but think I probably have to wait until I've had some dental work done before I can try it (struggling with anything that needs too much chewing to be honest - I chopped my salad very small tonight to be able to manage it)

@SapatSea - I was also disappointed with an Artisan Grains one. DD and I like this one. Very easy, plus easy to make a half portion if you're the only one who wants it. If you have a freezer, it also freezes well (and I thoroughly recommend it as a sandwich filling if you eat bread, Mayo and cranberry sauce essential though). Hope you like it if you try it

www.vegansociety.com/resources/recipes/special-occasions/easy-nut-roast

Today

B: porridge with sultanas
L: sweet potato/chickpea/peanut stew with broccoli
D: small salad of lambs lettuce, tomatoes and avocado with pasta and kale pesto (guided by minimalist baker recipe)
S: love raw wafer bar - I got a box delivered by Amazon yesterday that were not ordered or paid for. Addressed to me (but not quite correctly). Really odd, but something similar happened to my dad last year (bot vegan chocolate though 😂) Anyway, turns out the box of 12 would cost best part of twenty quid but Oh. My. Days. So delicious, just how I remember kinder bueno bars tasting. I’m not sure how many I’ll get to eat though as DD15 is VERY taken with them 😂😂

KobaniDaughters · 10/02/2022 06:35

@PartTimeDomesticGoddess wasn’t at all chewy if that helps - the consistency is almost spongy

I ate far too much today
L: yesterdays leftovers in a wrap (OMG so good), 3 rich tea biscuits, date ball, mini banana muffin
S: DC leftover cold pasta, 3 Girl Scout thin mint cookies, dried mango
D: made a root veg and mushroom pie with slices sweet potato top (not as nice as a mash top) which was bloody delicious

SapatSea · 10/02/2022 10:05

PartTime the nut roast you cook does look easy. Have bookmarked it.I'll get some extra nuts in next week's grocery delivery and maybe have a go.
The Love Raw bar looks good - one of my kids loved Kinder Bueno so she would be interested. Any ideas on who might have sent the mystery gift?
The celeriac "fish" recipe by Thomasina Miers got me thinking about a different ways to use celeriac (rather than as a side) so I made curried celeraic for dinner.

My DD's in their quest for a good plain vegan sponge cake made the one from BBC good food (old style with vinegar). It looked great when it came out of the oven and smelt right. But by the time it cooled it was all flat and bedraggled like the bottom of an old sponge scrubber and tasted worse! Grin.

Sn: G&B dark chocolate, ready salted crisps
L: Nutburger, mash, broccoli
D: Curried Celeriac, lemon garlic spinach, roti
www.olivemagazine.com/recipes/vegan/curried-celeriac/
I was a bit too full from earlier in the day to really enjoy it. It was nice but I wouldn't want it often. I also wouldn't bother with pureeing the onion, garlic and ginger next time as I rather like getting a bit of chopped ginger in food and don't want to stir/watch the puree frying for 20 minutes to prevent burning.

KobaniDaughters · 13/02/2022 19:56

Have had a roiling stomach for a few days and not really paying attention to it so my diet for the next few days is going to look very bland indeed! Let me live vicariously through you all!

SapatSea · 14/02/2022 10:04

Sorry to hear that KobaniDaughters hope you feel better soon. Do you think it's a hangover from Covid?
I've not posted the past few days as I've also been living on a bland diet - cream crackers and a few mouthfuls of rice and steamed veg - so dizzy and now perimenopausal hot flushes have been added into the mix.

PartTimeDomesticGoddess · 14/02/2022 11:11

Hope you both feel better soon @SapatSea and @KobaniDaughters.
I've been doing my usual trick of keeping enough info in my phone to remember but not posting

D: South Indian curry made with cherry tomatoes, chard and silken tofu. Eaten with rice and broccoli

S: tribe nature bomb protein balls (2 pack, chocolate/hazelnut)

KobaniDaughters · 15/02/2022 16:52

Thanks @PartTimeDomesticGoddess I’m feeling much better today after 2 days of very simple (and not very much) food so must resist the temptation to jump back into normal way of eating in case I bugger up my poor tummy again! Much as your Jerusalem artichoke soup with ciabatta and garlic sounds amazing - probably the worst thing I could eat now 😆

I’m going to make a kale and mushroom and gnocchi dish tonight but maybe I’ll do it oil free and stick away from the gnocchi? I did a miso tahini sauce on steamed sweet potato yesterday for the anti-inflammatory and probiotic goodness so might make a similar sauce for tonight

SapatSea · 16/02/2022 12:02

I'm on the mend too but stuck to porridge, prunes, seeds and cinnamon for lunch and steamed rice and veg for dinner. Crackers for snacks. May venture outside toddler food today.

Love the all the silken tofu dishes PartTime. Really ike how you go the "whole hog" with loads of side veg, gravy etc - all the "fixings"

Miso Tahini sauce - what a flavour bomb KobaniDaughters

KobaniDaughters · 16/02/2022 14:20

Yeah it was good @SapatSea though I missed my usual tahini and lemon, I used apple cider vinegar for tartness instead as was trying to steer clear of citrus still.

I think I’m pretty much better today so adding back legumes and raw veg. So hungry though!!! Been trying not to overload my system and honestly rice cakes and steamed veg is a bit boring to over eat on anyway

The mushroom, kale and sauce last night was lush though

KobaniDaughters · 17/02/2022 02:57

L: cashew yoghurt with raspberries, blueberries and hemp seeds, a blood orange and handful of almonds
S: seaweed
D: freezer leftovers night!! Salad with tahini dressing, fresenjan and Dahl. Then 3 truffles!

SapatSea · 22/02/2022 20:01

Nothing new or exciting - lots of dal, channa masala's, chinese cauliflower rice or black rice, butterbean and fennel stews. Eating lots of spring greens and cabbages.

SapatSea · 23/02/2022 22:01

I roasted some Cauliflower rice in the oven for twenty minutes this evening. It was great I didn't even flip it half way through - saves standing at the hob endlessly tossing it in a wok to get it toasted and flavoursome. I made some roasted red onion onion, chestnut mushrooms and a punnet of really fresh baby brussel sprouts in a miso marinade to go with it - based on this recipe:
www.feastingathome.com/roasted-cauliflower-rice-bowl-miso-veggies/#tasty-recipes-18476-jump-target

I thought the flavour would a bit underpowered (with no ginger or garlic in the marinade) but it was great especially when the veg was topped with some Furikake, scallions and white pepper and soy. It was great to just shove two large trays in the oven and go off for twenty minutes and come back to a really tasty dinner.

PartTimeDomesticGoddess · 25/02/2022 15:27

That tray bake with cauliflower rice sounds awesome @SapatSea. I'm bookmarking that (have some cauliflower that needs eating too 🤔)
I love things roasted in the oven, especially when they then have a delicious marinade or sauce applied

Sorry for going awol. Whenever I thought about updating I didn't have time, especially as the longer it went on the bigger the update felt it should be 😂
Plenty of comfort food going on over here - highlights of the last week including homily pie and chickpea and veg crumble. And plenty of the usual oats, soup, Dahl and roasted veg thrown in...

@SapatSea - the silken tofu usage is out of necessity as I'm mostly the only one who eats it! And what's life without the fixings? 😬

SapatSea · 25/02/2022 16:37

Great to see you back PartTime. I really like the Feasting at Home site. I've never had a bad recipe from there and good inspiration.

I don't know about others but I'm more "adventurous" in my cooking in the warmer months when I want lots of little plates, light food and zingy salads. I like the familiar tummy warmers in winter. Homity pie mmm- big favourite of mine since the 1970's. I don't make it now as no one in the house likes pastry - I sometimes wonder how have I ended up in a family of crumble and pastry haters? At least two of the dc still like mash, I've been making that a lot for us at lunch along with Goodlife nutburgers and veg. It was heavenly after coming in from a long walk through driving hail showers yesterday.

KobaniDaughters · 25/02/2022 17:07

Love that site too @SapatSea and @PartTimeDomesticGoddess we do the Thai noodle salad all the time

Funny I feel like I’m more adventurous in the winter cos I love a good stew and pie etc

I’m still having weird stomach issues - that funny blip the other week and then got my period this week which often results in not fun bowel movement, I don’t know I just feel sensitive so I’m not sure what to do really - cut everything out and slowly reintegrate? Maybe my gut bacteria is just really out of sorts?!

PartTimeDomesticGoddess · 26/02/2022 10:17

@SapatSea - crumble and pastry haters?? I don't feel so hard done by now 😂 I only discovered homity pie a few years ago and love it. I adapt a hairy bikers recipe, using elmlea cream and nooch, and froze a portion this time so I'll report back!
It's cold here today but bright sunshine at least. Hope you have some too

@KobaniDaughters sorry to hear you're not back to normal yet. Have you tried/thought of a bit of IF? I haven't done any yet this year (am sure it won't be long though!) but I often find it soothes my system. Almost like it really needs/appreciates a break from the normal amounts and types of food. Apart from that, I'd definitely think of an elimination diet if it's not improving. Hate the thought of one, but tummy misery is awful (and unpredictable issues even worse!!)
Hope you feel better soon

I really want to try the Thai noodle salad you both love, but my chewing power is seriously hampered at the moment. I am booked for stage 1 of some implant work at the end of March, but also need some other work done so I'm having to consider what I can eat quite carefully. Managing, but it does limit my options! Fingers crossed that I'll be able to eat normally by the end of the summer 🤞

@Nouveaunew we're not about healthy on this thread. Well sometimes we are, sometimes we're not. It's what we really eat, not the Instagram version :)

B: Monday smoothie
L: lentil and veg soup with nooch and half a slice of buttered toast
D: large pancake filled with creamy garlic mushroom and spinach type stuff. Pancake was too thick but filling was nice. Just had tinned peaches and custard for pudding (retro 😂)

Well said @PartTimeDomesticGoddess !

I’ve been a bit all over the place, just too busy to think and the last 2 days have had the most awful jaw pain (tummy pain has gone though) I’m wondering if it’s all stress related. Anyway means I’m eating very boring liquidised food

L: mashed up avocado (2 of them!)
D: leek and potato soup
S: tried eating some of DD’s very soft leftover pasta but it hurt, so have mainlined a huge oat milk chai latte
