TwittleBee I love crumbles but everyone in my family hates them, so I rarely make them. I'm envious. Did your Aubergine Curry turn out similar to the restaurant one you like?

Sn: Hobnobs
L: Dal, broccoli, roti
D: Black rice, edamame, peas, spring onion, pak choy, ginger, garlic, soy, sesame oil, white pepper, Tabasco Sriracha on the side (tastes like rooster and flying goose brands but has no MSG/flavour enhancers that put me off these other brands - just a bit of Xantham gum as thickener)

Yesterday for me was way too snacky:
L: vegan “lox” cream cheese on a bagel with gherkins and scrambled Just Egg
D: DH made shallot noodles with tofu and smashed cucumber salad

And I snacked on cashews, chocolate, dried mango, peanuts

Another crumble lover who lives with crumble haters here 😂

Today was a bit odd food wise. I took a slightly bigger than normal portion of porridge with sultanas to work and then didn't eat it until about 11 because I didn't have time. So it was about 4 o'clock before I had lunch (Asian butternut and chickpea stew). Just about to eat dinner now, which is leftover stir fry from last night as I'm too tired to cook

Yesterday was
B: smoothie (oats, soya milk, blueberries and a dash of vanilla essence)
L: small white wrap topped with butternut squash/red onion/ras el hanout leftover from the weekend, chopped cashews and coriander leaves
D: stir fried mixed veg with noodles and tofu
S: alpro blueberry yogurt

Had a tasty day yesterday:

L: avocado, tomato, lettuce, cucumber salad with the smashed cucumber dressing from the night before, handful of cashews and an orange
D: mash, steamed broccoli and Ottenlenghi’s cannellini beans in tahini

L: large wholemeal bap filled with baby leaf salad, slice of smoked vegan cheese and Mayo. Cherry tomatoes
D: the celeriac flex of this Thomasina Miers steamed fish with Sichuan sauce and greens, really tasty - sticky rice, steamed celeriac/pak choi/spring greens and a bit of fried tofu that needed using up with spring onions and a delicious sauce
S: prawn crackers (vegan obvs - can’t remember where I got them from though 😂) and Lindt vegan smooth (yuuummmm)

D: tabbouleh and leftover lentil curry

Friday:
L: impossible thai meatballs with full Thai salad (ALL the toppings!)
S: dips and crisps and cucumber slices
D: oven roasted Persian squash, courgette, chickpeas and tofu with spicey tahini sauce

PartTime i bookmarked that recipe last week (but have run out of chilli oil) - looked so easy but I was surprised there was no sichuan peppers in the sauce. Loved that it had star anise in it. Did you bash the star anise into pieces? i thought if you did you would get little hard bits in the sauce. Glad it was tasty. I thought it was a really different way to use celeriac.

Hello everyone, hope you don't mind me joining for some inspiration, we're stuck in a rut.

Chilli for us yesterday, jackfruit chilli for me, but mixed bean for the kids.

Some of these descriptions look epic 😋 looking forward to when I can cook a leisurely tea instead of having to quickly rush through tea to get the grumpy toddlers bathed and in bed Confused

@SapatSea - yes to bashing up the star anise and also yes to thinking it was going to be woody when eaten! (especially as I have dental issues and am only eating things that are fairly soft until further notice) but it wasn't an issue at all. It really was lovely, but I didn't follow her method of taking things in and out of the steamer. Instead I tried to put things in for the right amount of time so they were all ready at the same time (including the fish I was cooking for DH and DD). I'll cut the celeriac into smaller pieces next time so that it is quicker - that took ages in the steamer so had to be started first

@KobaniDaughters - I can't take the credit for the veganising of that one as the recipe gave the suggestion (and I wouldn't have thought of celeriac there!) Your last couple of days have sounded awesome and I've followed the Iranian vegan now too

@Eileen101 welcome! I haven't used jackfruit in a chilli, that sounds lovely

Yesterday was

L: beans on toast
S: alpro vanilla yogurt, few crisps and the last few squares of vegan Lindt
Dinner was an epic nut roast with ALL the veg (photo included 😂)

PartTime your nut roast dinner looks truly epic. Love the long roasted carrots and parsnips!
Is the Vegan Lindt milk chocolate and is it good?
It's good to know that the sauce with bashed up star anise doesn't need straining - I'd just never think to do that. I always put them in whole and fish out at the end of cooking. Good tip about the celeriac needing a longer steaming time than fish. Like you, I'm often having to cook something meaty or fishy for H alongside my vegatables. I have to wait a week or so before I can get Chiu Chow chilli oil as Ocado have stopped stocking it and our village shops don't either. I used to make my own (but can't be bothered these days as I don't use it enough).

KobaniDaughters Love your picky day foods - but as a previous one off poster asked "are you eating enough?" Grin I also enjoyed perusing the Iranian Vegan site - good find.

Yesterday:
B: Hot Chocolate, seeded oatcakes, blueberries
L: Porridge, cinnamon, prunes, grated apple, seeds and nuts
Sn: Nairn choc chip oatcakes - I'm not convinced I really like these but they do taste of cocoa. (2 of my DC like them)
D: Ethiopian lentils, garlic spring greens, Berbere cauliflower steak. Based on this:www.feastingathome.com/crispy-berbere-chicken-with-ethiopian-lentils/
I wish I'd made the spice mix in the recipe (as it is mild) but I had some Seasoned Pioneers unopened Berebere mix in the cupboard so used that. I only used a tiny amount as I could smell that the chilli was very strong. It was a mistake as the chilli overwhelmed the complexity of the other spices in the mix and I ended up serving (coconut) yoghurt and roti with the dish to offset the heat which worked. I can see it would be lovely using the recipe mix that has the chilli downgraded.

D: Used up all the leftover veg lurking the fridge - made a butterbean stew with cabbage, carrots, parsnips, leeks, rosemary and thyme, dijon mustard etc. Ciabatta. It was nice and comforting.

L: spiced parsnip soup, sandwich (but roast/Mayo/cranberry sauce)
D: butternut/green bean/pineapple Thai curry with sticky rice

@SapatSea - thanks for the roast appreciation! Luckily youngest DD shares my love of a roast, because DH doesn't (we are well suited in many other ways, but not so much in the food department). 2 out of 3 and all that 😂
The Lindt vegan chocolate was milk (the hazelnut version was too). Was really quite impressed and I used to be a big Lindt fan.
I've done an Ethiopian lentil dish and really liked it. Shame the chilli overpowered everything else, I think the Ethiopian chilli tolerance must be pretty high (if I remember, I had to tone that down too).
Love the sound of your butter bean stew. Butter beans are yet another of DH's food no nos, but I really like them. He's fussy, but he never complains if I don't cook for him so it's really not an issue...

@KobaniDaughters - keep up the picky days. We rarely reference quantities on this thread 😉 I'm sure you'll be eating enough lol

yeah no fear - I don't say how much of everything I ate (a lot!!!) also after I posted DH's home made bread came out of the oven and I might have had several late night slices!!!

We can't get butter beans easily here which is so weird. I love Ethiopian food, might have to try out that recipe @SapatSea

Yesterday was
L: sandwich with "lox" cream cheese, lettuce, tomatoes and gherkins
S: very fancy ice cream as we got to DC piano lessons super early so I treated us all with lack of anything else to do. I wasn't going to partake but they had the last of a seasonal special which was this decadent gooey dark chocolate with whisky and I'm SO GLAD I decided to have it!
D: DH cooked this amazing tofu dish with bok choi and rice

Today I went to this restaurant with a friend and we ordered so much I have enough for lunch tomorrow - falafel, hummus, pita, the sprouts and broccoli side dishes AND a tahini shake which is like drinking liquid halva

Gonna do Ottenlenghi's tamarind mung beans for dinner

PartTime I'm lusting after Nut Roast now. It's been ages since I made one from scratch (another thing not liked in this house - they all like Paxo stuffed into mushrooms)the last one I made was from a packet mix by Artisan Grains and It wasn't great. In the 1980's I used to live on Delia's Curried Nut Roast or Sarah Brown's Cashew and Parsnip one. IIRC the last one I made was the Bosh one with Parsnips. Do you have a favourite recipe? I was thinking I could make one just for me and use it up over a few days for lunches.

KobaniDaughtersAnother great blog find.That Tofu looks so interesting. Tofu thawed and refrozen twice?!! That goes against all tofu "orthodoxy". Was it good? I haven't cooked any Korean food for a few years as I couldn't cope with the chilli levels anymore, we are not the friends we used to be. Your Husband really has stepped up his cooking.

Love the Ottolenghi Guardian link recipes. The Mung beans look so good - love the garlic/turmeric oil to drizzle on top but 3 tablespoons of Tamarind paste in the sauce seems a lot - interested to know if it was? I've bookmarked the link for when I can get into the City to get my ever growing list of supplies. I also like the look of the Butterbean dish - so simple but I can see that just adding preserved lemon to the tomato sauce will really lift it. It'd be a great side or addition to a mezze.

My H (the only carnivore in the house)has decided to cook more too. He has bought himself a slow cooker, so now we have the smell of stewing meat pervading the house all day Sad. He also expects me to seek and find suitable recipes Hmm Jog on...
