Can we please have a 'What I ate today' thread, vegan style?

I'll start!

B: bran sticks and oat milk, glass of OJ.
L: Hummus and tomato toastie.
D: Stir fry: pepper, courgette, onion, garlic, ginger, carrot and Quorn chicken-style pieces, noodles and lots of soy sauce. First time I've tried the chicken-style pieces; they were on offer. Nice and low cal/high protein, but nothing special in terms of taste.
Snacks: apple, banana, bombay mix.

L: fried up mushrooms, lentils and cabbage
D: shepherds pie and broccoli, cranberry and apple crumble with ice cream for pud

Picked at DC dinner ( mash and chickpeas) as a snack

Yesterday
Toast with marmite. 2 cups of tea.
Carot ginger garlic soup.
2 satsumas.
Chillie tomatoe pasta with olives.
Hot chocolate with soya whipped cream after a 10k run to warm up

Yesterday:

B - porridge with oat milk, peanut butter & smushed frozen raspberries.
L - Aldi Mediterranean pittas stuffed with hummus, grated carrot, olives and spinach
D - lentil moussaka from the freezer, green salad.

Snacks - those hummus crisp things that are ridiculously hard to just eat a few of!

D: mushroom and pine nut rice
Snacks : lots of raw veg
A whole bar of ritter sport. Shameful but totally delicious.

B - really gross vegan cereal I got at a vegan food fair thing recently. Literally like eating gravel and sawdust. With hazelnut milk.

L - white bean and kale stew

D - chips and gravy. Had a shite day and needed grotty food in pjs to cheer me up!

Yesterday was
Toast wih raspberry jam, 2 cups of tea.
Pot noodle.
Sweet chillie tofu salad wrap. Satsuma.
Roast chicken crisps. 3 biscuits. 3 cups of tea.
Jacket potatoes with cheese, beans and shroomdogs after a 5 mile run.

@BanoffeePi when I started I found it much easier to drop one thing at a time. So I gave up meat/fish first. Then swapped butter for vegan spread (Naturli is the best one ever, really barely tell the difference now) then cheese/milk/eggs etc.

If you do it in stages it’s much easier I think than just getting rid all at once.

Happy Birthday @MustardScreams !!

Yesterday was:
L: leftover bean and veg soup
S: some peanut butter stuffed pretzels and some peanuts
D: guac and chips, veggie fajitas and a margarita

Then baked MORE cookies (hosting a cookie exchange Friday and I’m not happy with the batches I’ve made so far) in a grump so ate more dough and 2 cookies straight out of the oven again

Today’s resolution - NO COOKIES

Cinamon roll. 2 cups of tea.
Tofurkey salad wrap. Satsuma. Packet of prawn cocktail crisps. 2 cups of tea.
Mince pie.
Fishes fish cakes, chips peas and hm tarte sauce.
Some twiglets

Soya hot chocolate and rocky road from Costa afterwards.
Soup for lunch.
2 cups of tea. 2 satsumas. 1 mince pie.
Fishes fish cakes. New potatoes green veg.

Lm sausage and mushroom sandwich with brown sauce.
3 cups of tea.
At my parents for a get to gether. Will be having lots of pizza, salads, garlic bread, there's mango cheesecake and a chocolate cheese cake (feed me vegan) and various cheeses and biscuits for later.

Yesterday:

B - Bran flakes, hazelnut milk latte.
L - refried beans, lettuce, oatly creme fraiche, salsa & Follow Your Heart Parmesan wraps
D - the miso aubergine from the recipe earlier in the thread with brown rice. Delicious!

Today I’ve had waffles with Naturli & maple syrup
L - Waitrose vegan stuffed pasta & their ‘cheese’ sauce. Never tried it before so will be interested to see if I’ll buy it again.
D - heading to the local vegan Japanese place tonight, so lots of noodles, sushi and seaweed!

Vegan christmas dinner panni, kettle crisps and mug of tea in Nero.
Dinner will be 3 bean chilli and sweet potato wedges after I get in from running later.
2 bananas and a satsuma.

Running plans changed earlier so ate before I went out. Also ran much further than planned , so just enjoyed a lovely salt amd vinegar crisp sandwich ( carbs and salt) and a nice cuppa

DH is vegetarian, vegan leaning.

I am currently a meateater but want to go veg and vegan.

I am doing ti slowly,.... already a vegan breakfast (muesli usually) and now adding in vegan lunches.... today will be pasta with vegan pesto, black olives and cherry tomatoes.
