I'm new at veganing and I'd like ideas and somewhere to record my meals... please let me know what vegan food is on the menu in your house tonight (or eating out too actually) I am really interested 😊

So tonight I am making veggie chilli out of sweet potato/courgette/peppers/carrot/baby corn/kidney beans etc served with guacamole and tortilla chips. I have homemade vegan brownies for dessert.

Don't think I will miss meat/dairy at all Grin

We're having Buddha bowls this evening - roast sweet potato, kamut and greens topped with tahini-yoghurt sauce and nuts.

I made a swiss chard|carrot curry yesterday which was gorgeous. The problem I have is that I need to make a lot , to use it up, (I hate waste) dh won't eat it. So I have to freeze the leftovers and the space is running out.

A little piece of me dies typing "Buddha bowl" because it does sound wanky. The people over in the "let's sneer at vegans" thread would love it Grin

You can send some of your chard / carrot curry this way, it sounds delicious and we've eaten most of what I stashed in the freezer Shock I didn't think this day would come as it was HEAVING but now I'm going to have to get batch cooking again!

It's only my first day veganing but hoping to pick up lots of ideas from this thread, lots sounds absolutely gorgeous.

For me I've kept it simple while I find my feet with a sweet potato coconut curry that I chucked some peppers, cauliflowers and chickpeas into with brown rice.

We just had red curried lentils (speckled lentils, red curry paste, ginger, garam masala, coconut milk, tomatoes and veg) - so yum and feels like someone else made it when it's done in the slow cooker

I love chard - esp the rainbow kind. So pleasingly pretty!

Because it's RAINING we're having puy lentil soup with squash and fennel. Earthy and bright at the same time and vvv easy.

MakChoon I have totalmcarte blanche tonight too as DH and DS will be fed at scouts and DD has requested quesadilla.

I've got this lot in the fridge, anyone want to come up with something exciting for me? I can't have turmeric but other than that go crazy:

Golden beetroots
Red peppers
Baby kale
Baby courgettes

Also have chickpeas, lentil, black beans, usual carbs in the cupboards and a decent spice rack

Day 2 vegan fail. Made stirfry and didn't think until after I started logging my food the noodles I used from out of the cupboard are egg ones. Annoyed at myself but I'll know next time.

I made a big pot of vegetable and bean chilli yesterday. It's going to last a few days, which makes me happy as I can have a few days off cooking :)

It was sort of vaguely based on the black and kidney bean chilli in Deliciously Ella but with loads of extra vegetables - red peppers, red onion, courgettes, garlic and celery.

Hope you got some inspiration Kiki, I would probably have cooked some rice to mix with some black beans, roasted the beetroot / peppers, cooked some of the kale, and had it with tahini and soy yoghurt sauce, maybe with some flaked almonds or frozen pomegranate seeds for pretty, with some of the rice and some of the roast veg leftover for tomorrow.

I seem to be doing low key cooking this week (the lowest key was getting OH to make a stir fry on Tuesday!). Last night was paprika roast sweet potato wedges with guacamole and salad. Tonight will be chickpea pasta with pesto if I buy some basil or arrabiatta sauce if I'm sticking with storecupboard stuff.

Isn't it basically a big salad? When I have my shit together I will have things like cooked sweet potato, broccoli, roast Mediterranean veg, cooked grains/pulses in the fridge, so I can make up a salad in the morning for work with all that kind of stuff included.

Am away with work and had a hotel
room picnic from the local co-op last night - vegan wrap/sandwich (falafel & hummus, and sweetcorn fritter & pineapple salsa), lentil chips, and mini bottle of wine. Even a junky vegan day feels reasonably healthy.

Stillliving it's an ancient grain related to wheat, it's also known as Khorasan wheat. It's high protein and tastes nutty. I love it, you can get it in Tesco in the whinging vegan aisle.

That wasn't very descriptive,sorry.I mash beans/cook lentils and veg and ketchup to bind then roll in dry polenta(rather than breadrlcrumbs)and bake in oven.sometimes I do as small balls or as burgers.

Doh,obvs we add seasonings like herbs and spices/garlic dep on which veg.often add bit nut butter/ground nuts or seeds or tahini for extra protein

Sounds yum Grin I do the polenta for 'breadcrumbs' thing as well. Or a 50/50 mix of polenta and nooch, if I want cheesy flavour.

I tried Giant Couscous today - it was lovely 😊 and Lidl have falafel in at the mo - 2 different flavours in the fridge section, v.nice!
