I'm new at veganing and I'd like ideas and somewhere to record my meals... please let me know what vegan food is on the menu in your house tonight (or eating out too actually) I am really interested 😊

So tonight I am making veggie chilli out of sweet potato/courgette/peppers/carrot/baby corn/kidney beans etc served with guacamole and tortilla chips. I have homemade vegan brownies for dessert.

Don't think I will miss meat/dairy at all Grin

We had the nicest Malaysian curry tonight. Wide ride noodles & the curry had potatoes, onion, carrots, red pepper, and Korean wheat protein discs. And coconut milk of course. I got it in my head to do it Malaysian style and lo and behold the local grocers had Malaysian curry powder.

I buy and use those sticky labels faux Dh is great at putting random unmarked things in the freezer, it's annoying! The only positive is that I throw out all unmarked stuff after defrosting! It's not usually something I would eat!

So you made a soup with the celeriac! I use them in stews as thickeners and or toppings (sometimes cooked and mashed with parsnips or carrots) for vegan shepherds pie type things.

The wheat protein discs are chewy. I buy them fresh & then freeze them (pretty big Korean population where I live, not sure how easy they'd be to find other places?)

I have never heard of wheat protein discs - is it seiten?? DH wanted to try that but I don't know where to find it to buy Confused

Veggie and soy mince chilli with nachos and avocado today for dinner followed by the joyously vegan Lidl Greek week baklava - soooo gooood Grin

Woops. Went and looked in the freezer and it turns out they're rice cakes (still a protein source). They come in tube shapes and discs. Maybe those are available? Korean groceries are thick on the ground here, not sure about in the U.K.?

loving the new random food items you end up coming across when your diet changes!

I had falafel, houmous and tabbouleh for dinner tonight. Picked up vietnamese summer rolls (which tofu instead of shrimp) to take to work for lunch tomorrow, and DH said he'll make us a vegan chilli for the evening, yay!

You can get Korean rice "cakes" in the UK. I've bought them from the Sous Chef website but have seen them recently in some Asian stores.

I have used them to make a Korean dish called Dak Galbi
mykoreankitchen.com/dak-galbi/ which is very hot (just left out the chicken and threw in some fried tofu with a bit of a crust at the end and extra leafy veg). They are a bit chewy and are apparently much nicer if made fresh which needs quite a lot of prep in advance:

I have had this in my recipe folder for a long time but never got round to making them.

My DP didn't really like them - so we still make Dak Galbi (when it just the two of us) sometimes but just serve it with rice.

I made a vegan vegetable dahl last night and had it with flaked millet instead of quinoa ( I thought I had some but didn't). The flakes are much quicker to cook.

I gently cooked a chopped shallot, garlic and celery and grated carrot in olive oil and a bit of water. Then threw in the yellow lentils (no soaking or anything) added water and tamari. Put a tight lid on and cooked it on a very low heat. For approx. 15mins. There's half left for later , dh is a confirmed carnivore (he cooks his own meat dishes) , but he might eat it when he gets back.

Last night's dinner here was pasta with asparagus, garlic, and mushrooms in cashew cream sauce (just soaked cashews blended with water).

Served with obligatory bread to keep omni dh happy. Grin

Sorry folks I forgot to mention the curry spices in my dahl recipe, for goodness sake! I use a tbsp. each of ground coriander, turmeric, cardamom and ginger. I DO like a tasty curry. I add salt or tamari at the end of cooking.

My lovely mum made me a delicious vegan pie for lunch today with lentils. I may ask her for the recipe to share but it's not the sort of thing I usually make - my meals are more of a one pot wonder and this was a creation with many layers!

My gorgeous sil made us Jamie's vegan shepherds pie with lentils and chickpeas today and then had bought amazing slices of vegan chocolate cake from a local cafe.

I had Thai takeaway on Friday, freezer curry last night and yummy salad with creamy dressing and Jersey Royal potatoes tonight Grin am finding veganing easier than I'd ever imagined - I love it!

Yes *Faux it's better,I think, because it makes me look for other forms of flavour. It makes us become more creative.

I have smoothies for breakfast too, I major on health;

2 pears (or other seasonal fruit)
1 whole lemon
4tbsp. linseeds,
4 figs or dates

This lasts me 2 days. Sometimes more
4 tabsp ground almonds or almond butter,
Filtered water \fruit juice

Cous cous with red lentils and veggies in roast pepper sauce.

Lunch was broccoli soup and bread drizzled with olive oil.

Breakfast was porridge and a wonderful cup of tea since I've discovered a tiny dribble of Oatly is a fairly good rendition of what my old cuppa tasted like.

Snacks: dried figs, rice cake with nut butter, apple
