I'm new at veganing and I'd like ideas and somewhere to record my meals... please let me know what vegan food is on the menu in your house tonight (or eating out too actually) I am really interested 😊

So tonight I am making veggie chilli out of sweet potato/courgette/peppers/carrot/baby corn/kidney beans etc served with guacamole and tortilla chips. I have homemade vegan brownies for dessert.

Don't think I will miss meat/dairy at all Grin

Yesterday I made some spaghetti with griddled courgettes, garlic and basil with a squeeze of lemon, extra virgin olive oil and some queen olives on the side for lunch.

For dinner the fridge stocks were running low so I made some Chipotle black bean and corn burgers topped with tomato and avocado smashed up with lime juice and some lovely pink pickled onions made with red onions, cider vinegar, orange juice and lime juice that made it all really refreshing.

I'd like to thank people for the thug kitchen recommendation. My DH loves Mexican food. I made the cauliflower tacos with coleslaw (vinaigrette and lime dressing) and avocado at the weekend. I nearly didn't make it because I was worried he wouldn't be keen but we both loved it.

I am making a veggie chilli with potato wedges and salad tonight.

Loving all the healthy ideas on this thread.

These are all such great ideas. I'm on a 5:2 kick and working insane hours so we're being very boring to keep up with it but I did just find out about Nigella's marmite pasta AND I have found a legit vegan Parmesan so I think we'll be doing that this week at some point!

It's Cinco De Mayo this Friday so I'm just hearing towards Mexican happy hour then!

I've made thug kitchen tempeh peanut noodles tonight. I'm serving it room temperature with cucumber and sliced spring onions which is the books reccomendation for the leftovers but which appealed more than a hot meal.

Still not doing very well mentally with eating at the moment whilst I wait for my assessment but I am trying to make sure everything I do eat is at least nutritious without getting in a panic about it. Struggling a bit ATM if I'm honest, if anyone has any easy snack ideas I'm open to try them. Heads a bit of a mess.

delivered where do you get vegan parmesan from? I made pesto this evening and it really could have done with parmesan. Recipe suggested nutritional yeast but I can't stand the stuff.

I know what you mean about nooch, I'm not a big fan but I really love it in HM pesto

MoonriseKingdom - I printed off the cauliflower tacos recipe a couple of days ago to make in the next few weeks - glad to hear it is nice! Do the florets crisp up in the oven and taste of the beer at all?

Baked sweet potato with guac and rice salad (Black beans/corn/pepper etc in it and a cumin dressing) Yum.

I also made banana walnut cake to my usual recipe but with 'fake' butter and egg replacer - was completely normal and nice. No drama Grin

I just found violife vegan parmesan in my local wholefood shop. Not sure about the taste of it on it's own but will try it later on a salad with toasted seeds.

Tonight I am making greek butterbeans with quinoa and greens (OH will have lamb with his).

worm - I'm not convinced the beer made much difference but the cauliflower was crunchy and spicy (I am generous with the spices as DH likes hot food). I do cauliflower roasted with Indian spices quite often and I think it's a good way to eat cauliflower!

I had Briam for dinner last nice thanks to this thread reminding me about it's yumminess...I had forgotten how easy it is to cook too! Needs to be on the 'regular' list immediately!

I have a rubbish cold so tonight I will be doing Thai sweet potato yellow curry with rice to try and kill all the germs with chilli Grin

Last night we had Trapani style pasta (minus the anchovies and cheese obviously) from the Jamie Oliver 30 minute meals book

I halved the ingredients to feed 2-3 people but it made so much sauce. I had some really nice Isle of Wight cherry tomatoes that smelt and tasted delicious so it was very nice - lighter than standard basil pesto. I made the griddled chicory with balsamic vinegar to go with it - but no one liked its bitterness and some olives and warm ciabatta on the side. My "D"H (who did have cheese with it)said it was a bit of a" meagre" one note meal - whilst I thought it a feast! He can cook tonight!

Have been thinking about freezing the excess sauce- online some say yes - to use later in other sauces and some say no - so it's in the fridge for now.

We had Anna Jones smoky white beans for dinner w sweet potato chips and chipotle mayonnaise and a small Caesar salad (light on garlic) on the side. Mmmmm!

Loving all the ideas on this thread! I've bought some tofu so think I'll try the tacos with it, they look yummy!

Tonight I've had my staple which is red and green lentils, butternut squash, veg stock and spices thrown in the slow cooker for a few hours. Had this with polenta done in the frying pan and corn on the cob Smile

The Tofu tacos were NOT a success. The texture was all spongy inside. I had to use Cauldron tofu rather than my usual Taifun brand - so I pressed it for ages in paper towels with a big crueset pan and lots of tin cans as a weight.

Everyone put a few crispy cubesin their tacos but no one liked them - they much prefer lots of roasted veg and/or black beans - I had griddled some peppers along with the corn and made some pick pickled onion and a lot of guac so that meant the meal was edible but shan't be making these again.

Making safe Tomato and caper linguine tonight with olive ciabatta.
