Vegan what's for dinner thread...

I'm new at veganing and I'd like ideas and somewhere to record my meals... please let me know what vegan food is on the menu in your house tonight (or eating out too actually) I am really interested 😊

So tonight I am making veggie chilli out of sweet potato/courgette/peppers/carrot/baby corn/kidney beans etc served with guacamole and tortilla chips. I have homemade vegan brownies for dessert.

Don't think I will miss meat/dairy at all Grin

I've not read most of the posts about dinners etc but wanted to share that my lovely DP bought me a vegan chocolate cupcake that we shared which was delicious. He's so supportive, I really am lucky to have him.

Wrt to moving the thread I would say yes if only to improve traffic to the new topic to keeping it alive! I also think it would be good to establish the new topic as being inclusive - the same as this thread is Smile

Of course stlliving Grin It's a flexible, easy one pot recipe;

Use a large heavy duty saucepan on the lowest heat. Melt 1cup of molasses or half of maple syrup and rice syrup or what you like for a sweetener but it needs to be syrup to 'stick' the cake nicely together. Then add the spices you like, (you get the picture about flexibility!) I used cinnamon, a lot of ground ginger ( I love ginger!) plus cardamom. Then add whole skinned almonds that you have soaked for a couple of hours or overnight.

You can make this into chocolate brownies by adding i\2 a bar of dark choc. at this moment, let it melt without stirring much. Then add 3 tbsps. of almond butter or peanut butter of course! Gently stir in enough rice milk or almond milk.. to loosen the mixture.

Let it cool off the heat and then add 1 cup of ground almonds and one cup of whatever flour you like, I used sieved rye flour because we don't eat wheat. Then one heaped tsp. of baking powder and one flat
one of bicarb.
Line a tart tin with greasproof paper and pour the mixture in (it should be loose but not too loose!)

Put it an oven 170 C ,If your oven is only fan then 160C I turn the fan off for this, for 1\2 to 3\4 of an hour. It should be bit squidgy in the middle but the edges coming away from the sides. let it cool in the tin then cut into squares. This improves with keeping! wrapped in greaseproof paper in a tin. It freezes well too.

Tonight we're having lentil shepherds pie. We are going away tomorrow for the long weekend so need to use up loads of potatoes before we go.

Am planning quick quesadillas tonight with vegan cheeses, onions, tomatoes and other chopped veggies, maybe some cooked pulses. Using square wraps and sliced (and spreadable) cheese. So lazy!

I'm having homemade asparagus soup. With a tahini\white bean dressing and spelt toast.

Our local market has lovely economical unsprayed green asparagus at the moment!

Leftover night as only me for dinner tonight - have checked the fridge and will be having a kind of Meze of lunch and dinner bits and bobs from during the week:
Briam, garlic stuffed giant green olives, baby beetroot with balsamic vinegar and toasted walnuts, mixed bean salad, roast veg faro salad and some beautiful Isle of Wight cherry tomatoes, cucumber, shallots and dill in a salad.

I had no idea you could roast radishes - does it change the taste much? I love them raw

DH and a friend who was over ordered sushi for dinner last night so I splurged and ordered mushroom enchiladas from one of my favourite vegan restaurants.

Fast day today so very boringly I'm having cabbage and kale soup for lunch, then a marmite bagel for dinner!

kiki it softens the fiery nature of radishes to just a warm glow.dd2 only eats raw ones thinly slice,but would eat a whole plate roasted ones and they go a pale pink I find quite pretty!!

Today I am sick and DP is away with work, so I'm just eating a panini made with a part baked ciabatta, Violife for Pizza vegan cheese, Vbites 'chicken' and 'sage and onion' slices, avocado, Vegenaise and pesto, done in my panini press. Not remotely healthy but very comforting.

Hello! I might have posted waaay back so apologies if I've mentioned this before:
Chickpea and coconut milk curry.
Blitz onions garlic ginger garam masala and chilies and cook off, add coconut milk chickpeas a tsp of marmite and a head of broccoli. Serve with coriander and a squeeze of lemon. Very quick and amazing.

I need to buy a new sharpie because I have loads of unmarked Tupperware in the freezer from over-catering in the last few weeks and I am having trouble identifying all my vegan delights 😂
