I'm new at veganing and I'd like ideas and somewhere to record my meals... please let me know what vegan food is on the menu in your house tonight (or eating out too actually) I am really interested 😊

So tonight I am making veggie chilli out of sweet potato/courgette/peppers/carrot/baby corn/kidney beans etc served with guacamole and tortilla chips. I have homemade vegan brownies for dessert.

Don't think I will miss meat/dairy at all Grin

I just used up some left over rice and some slightly sad vegetables in a stir fry - I actually really love it though because I add soy sauce, lime juice, peanut butter, sriracha and teriyaki sauce and it's delicious.

The fajitas turned out quite well! Probably will add red pepper for crunch if I do it again. I forgot to photograph though!

Not sure if vegan as I'm veggie so didn't check but we had incredible quorn sausage casserole with sweet potato mash. Yum yum

Tesco soya mince bolognaise - slightly odd taste so will only do occasionally. I chucked some yellow lentils in but they weren't quite cooked as much as I'd have liked so I'm currently hoping our tummies are ok tonight!

MsJuniper I'm really struggling to find a good pre made soya mince. I used to love vegemince as a child but once quorn become widespread I stopped eating that and became used to quorn instead. Now obviously it's off the menu and soy mince tastes chewy to me. I think I'm experiencing what meat eaters do when they try meat substitutes! I've tried every own brand going over the last year and have settled on lentils instead for now.

I'm hoping a year or so down the line I will forget what quorn tastes like so the soy mince doesn't taste bad in comparison!

Has anyone tried a brand they would reccomend?

I think this has been my least favourite meal so far. Definitely sticking with plant/bean based meals rather than substitutes in future but it was good to try it.

I used to like vegemince when I was younger too, it had a less spongey texture iirc.

MsJuniper, I ordered a vegan moussaka in a restaurant at the weekend and it was a bit grim due to soy mince! I wasn't expecting it to be in there for some reason, as I just thought it would be veggies. I actually thought they'd made a mistake and that it was, (really revolting), meat for a minute before I realised what it was. It wasn't nice at all. Spongey is exactly the word.

The only meat substitutes I've had any success with are the Linda McCartney Peking duck, (I know hardened meat eaters who couldn't tell it was vegan), and some of the Fry's Family Foods products.

Hope you don't mind me joining in, long term vegan here and I've seen some fab ideas on this thread. Smile

For soya mince I prefer the dry savoury one (not plain, texture is different for some reason) from Holland and Barrett, re-hydrated with tinned tomato/veg stock, soy sauce (for the umami flavour) and whatever seasonings fit the dish. It works out pretty cheap since it swells and we stock right up on penny sales. Also if you sign up for a H&B card they will give you £1.50 in points. They do veggie sausage rolls and porkless pies in the chiller which are nice to grab on the go, just watch for the scotch egg, the packaging says vegan meat filling but the egg is real.

Dinner last night was tacos made with the tomato mince, lots of veggies and Tesco's free from sour cream. Grin

I had salad with roast cauliflower/carrot/onion/chickpeas etc in it last night and planning on tomato sauce with pasta tonight (DH is cooking so it will be lovely Smile)

I'm not mad about the fake meats either, I might try out that dried one though...I am trying to eat more 'normal' food for a few days because I think the sudden influx of pulses/soya is giving me stomach ache in the evenings Sad I also got a B12 spray because DH was concerned about deficiency...

I made Tofu scramble for the first time today, it was lovely! For lunch I had yo sushi and there was an ice cream stall selling vegan ice cream outside. For dinner I had paprika pringles and Grapes Hmm

Road tripping through Texas meant wholefoods salad bar yesterday, and we went TexMex tonight - I had an amazing bowl of rice, beans, lettuce, Veg, shit tons of Delish portobello mushrooms, extra avocado (held the cheese and sour cream) washed down with magaritas

Oh wow still, they sound amazing. I'm impressed you've made them yourself! I imagine they are very tricky (I am a rocky road kind of baker myself).

Last night was a LM burger (veggie, not vegan), homemade chips and crudités.

I have also heard that Betty Crocker icing in tubs is vegan which should come in handy...Smile
I am having ikea veggie balls with salad for dinner tonight, lazy but nice. I need to go shopping - the cupboards are bare!

I had chickpea 'tuna' sandwich for dinner tonight, at lunchtime I had a lovely pasta salad with pesto (sacla free from) broccoli asparagus and cashews.

We had fajitas made with pre-made spice mix, fry's thick cut strips (fake beef stuff), peppers and onions on wholewheat wraps topped with avocado, cucumber and sweetcorn. Was really nice, considering it was all thrown together last minute with what we had lying in the fridge.
