I'm new at veganing and I'd like ideas and somewhere to record my meals... please let me know what vegan food is on the menu in your house tonight (or eating out too actually) I am really interested 😊

So tonight I am making veggie chilli out of sweet potato/courgette/peppers/carrot/baby corn/kidney beans etc served with guacamole and tortilla chips. I have homemade vegan brownies for dessert.

Don't think I will miss meat/dairy at all Grin

What do you use for the "cream" DeliveredByKiki?

Making sort of bean Kofte's tonight (I find Falafels too dry) with garlic, allspice, cumin, smoked paprika, black beans, mushrooms and some gram flour in a big middle eastern flatbread with shredded lettuce, a cucumber, red onion, dill and red wine vinegar dressing, pickled chillis, harissa and tahini

We are hosting Easter for family this year. DH is cooking lamb with roast potatoes, carrot and swede mash, cabbage and peas for all the meat eaters.

I am having LM vegan sausage rolls with all the vegetables and some vegan gravy made from granules. I can't say I'm sorry to be 'missing out' as I'm having more or less the same as everyone else. I only do vegan on weekdays so will have the non-vegan pud if I want it. Maybe not though.

Very sunny here in the SE so I'm going to make a Meze with hopefully leftovers for weekday lunches. Stuffed peppers (Turkish style - with rice, dill, parsley, toms,pine nuts simmered in a pot), Muhamarra dip, mixed bean salad with a sharp marinade, a faro salad or maybe some kisir and some griddled vegetables with a garlic and lemon dressing. The family meat eater can have some griddled meat. My kids are all veggie (they eat cheese, egg in cakes and have milk occasionally in cereal) and I am a veggie but with lactose issues (from birth) - all trying to eat more vegan food - I usually make dishes that are easily adapted for the others by adding meat on side or cheese on side.

Anyone having Easter picnic? It's raining here but we'll brave it!
Just prepping 'cheese', onion and red pepper puff pastry rolls.
Hummus and salad flatbreads
'Cheese' and beetroot pittas
Salad with a rapeseed, lemon and garlic dressing.
and vegan lemon drizzle and banana cake.
We'll also have pringles, cloudy lemonade and a flask of tea.

I went to a vegan food festival yesterday and have got the most delicious apple cake from there! So that with tea for dinner tonight!

Hi all I came on a while ago to ask advice on what to cook lovely (newly) vegan bil. Thanks to advice I made a tomato, caramelised red onion and homemade pesto tart and Jamie's vegan chocolate brownies with dairy free salted caramel ice cream.
He was blown away, I can really recommend the brownies I fed them to the omnivores too (including the kids) and everyone loved them and didn't notice any difference.
So thanks very much for the adviceSmile

Just found this thread oddly when we were talking about trying to eat more healthy food as we've slipped into bad habits for 'quick' meals, so agreed to try to cook more veggie food (we are omnivores but used to eat more veggie / vegan when we were young and money was tighter and felt better for it, but have got lazy). Definitely got some inspiration from this thread..

Tonight we had Crank's Harira (vegan version of the traditional Moroccan soup with chick peas and broad beans) which was lovely.

Had loads of time though as we were kicking about doing DIY (not that the prep takes much, just dried pulses take an age to cook), so need to find some quicker dishes for weeknights so that we don't slip into bad habits too often

Buggers there's some good quick stuff on here! I always cheat with chick peas and beans and buy canned. Dried lentils don't take too long but canned beans just makes life easier!

Twenty I do cheat for some, but not usually ones where spices need time to cook in. Although I should probably experiment as I bet there are some where I've not tried canned but should give it a shot.

I used to use a pressure cooker but there was an incident involving over-heating and a bit of hot metal regulator breaking off and pinging past DP's shoulder. I suspect they are better these days but I'm still a bit wary!

I have baked Mary Berry carrot cake - only change was using vegan egg replacement powder and vegan cream cheese for the frosting and it looks perfect! Having family for Easter tea and will be serving said carrot cake, hot cross buns, jelly and fruit, bread sticks, veg sticks and hummus...a vegan tea and they will never know! Grin

Can I join please? Haven't yet watched the Simon Amstell programme but definitely going to now. I'm currently veggie and so is DH but I have coeliac disease and so although we ar totally veggie at home I often end up telling people I'm willing to eat fish if we are going over to theirs because I feel bad for making them cater for a GF veggie. Any tips for how to get round this?! I'm not sure we'd ever be able to eat at MILs again if she couldn't make fish pie!

Also while we're on the topic, any ideas for vegan GF dishes that don't include soy/tofu? Thanks!

I am not vegan either, but that Simon Amstel program is really good. It is supposed to be a comedy, though some bits are quite hard hitting. I want to make the transition to vegan too.

There is a lovely recipe for aubergine, tomato and chickpeas on this thread. I can't remember who posted it, but it's a river cottage recipe. It's gluten and soy free.

My lentil bolognese is gluten and soy free (though you'd have to find an alternative pasta).

I also posted a recipe for Briam on here a while ago. It is gluten and soy free too.

Rattata I followed a recipe online but it was pretty horrible so I made up my own - sautéed garlic in white wine, added flour to thicken then almond milk. It was lush.

Attempting vegan lasagne on weds as I found vegan lasagne sheets in my local shop and I'll have done two back to back fast days and in need of comfort food!

Superveggie I'm similar in that I eat fish on occasion- normally when we go to someone's house or if we're out and the vegetarian options all have egg and cheese (I call myself vegan out and about because I don't eat dairy or eggs and if I say pescatarian I keep getting served stuff with them in them) I want to transition fully to vegan but my whole journey has been a slow process and I'm just not ready to give up fish completely yet - but I am v fussy about where it comes from at least. Baby steps

I actually love that there are people on this thread who aren't 100% vegan but are doing their best and not getting any backlash

That's kind of what I wanted kiki - the word 'vegan' can really seem to rile people up! I'm happy we have this place to bumble along sharing recipe successes and new product discovery without it turning into a heated debate...maybe it's because we are hiding out in the Food topic Grin

Tortilla wraps and stir fried veggies even with various spices and black eye beans today

Have also made a quick soup for tomorrow (roasted pack of cheap winter veg blended with red lentils cooked in veg stock and a ready made curry spice pot). Will have that tomorrow as it's a late day and children are eating hot food at school.

Not vegan but supportive of veggie dds and often cook a vegan meal, tonight being a case in point.

Basmati rice with black-eyed beans cooked in cider vinegar, honey and chipotle paste, with sliced avocado, diced tomato and red onion for us.

Tonight I'm making the Vietnamese rice noodle salad from Thug Kitchen ELYGAF book. DH doesn't like rice noodles (weirdo Grin), so I'll have leftovers for tomorrow's lunch, which is a bonus.

Lots of us eating Mexican tonight! The black bean and sweet potato chilli was a great success will be making that again. It was GF as well. I'm not gluten intolerant but find that an awful lot of vegan meals naturally are, especially pre made stuff from free from aisle.

Me too!

We are at PILs for the week so have tried not to stress MIL too much and just said we are mainly eating vegetarian food at the mo and are happy to fit in with whatever she is cooking. So far it's gone well, we had a lovely squash curry tonight & cashew chilli on Sat. She did a trad roast on Sunday so we just had the plentiful veg. I'm sure there's been a bit of hidden dairy here and there but there wasn't any point making a massive deal of it as long as we are doing everything we can.
